Recipe: Rye Bread

Rye Bread Ingredients
- 1 pint potato water*
- 1 tbsp shortening (rounded) Crisco
- 1/2 cup molasses
- 1/2 cup sugar
- 2 1/4 tsp dry yeast (softened in 1/4 85° F. cup water)
- 1 cup light rye flour
- 1 tsp salt
- 5 to 6 cups white flour
To make Rye Bread
- Mix rye flour, shortening, molasses, salt, sugar.
- Heat potato water to hot but not boiling and pour over mixture. Mix well and alllow to cool to lukewarm. Add yeast.
- Add white flour a little at a time andkeep mixing and adding more flour until the dough is firm.
- Place Rye Bread Dough in a greased bowl, cover with a damp cloth, and let rise until doubled in size (about an hour).
- Cut the Rye Bread dough into 2 equal sized loaves, and place each half in a greased 9x5 inch loaf pan. Cover the loaf pans with a damp cloth, and let the Rye Bread dough rise until doubled.
- Place the loaf pans in a preheated 350° F oven, and bake for 1 hour.
- Remove Rye Bread from loaf pans, and allow to cool on wire racks before slicing.
*Potato water is the left over water from boiling potatoes.
