1 pkg(1.25 oz) McCormick Original Taco Seasoning
1 lb boneless chicken breasts, cut in strips
2 tbsp oil
1 can (14 1/2oz) diced tomatoes
1/3 cup apricot or peach preserves
1. Empty Taco Seasoning on a plate or into a plastic bag.
2. Add chicken strips to bag and toss to coat.
3. In a large skillet, heat oil over medium heat.
4. Add coated chicken to skillet and saute 5-7 min or until done.
5. Stir in tomatoes and preserves.
6. Cover and simmer 10 minutes.
