4 lbs beef bottom round roast
2 cups white vinegar
Water
4 bay leaves
15 to 20 peppercorns
6 whole cloves
2 onions, sliced
1 tbsp brown sugar
2 tbsp flour
Salt & Pepper

  1. Place meat in bowl with vinegar and water to cover.
  2. Add bay leaves, peppercorns, cloves and onion.
  3. Let meat soak in refrigerator for 24 to 48 hours.
  4. Remove meat and reserve liquid.
  5. Brown meat in some butter in a large pot or Dutch oven; add 2 cups of the spiced vinegar and the onions.
  6. Cover and cook over low flame about 2 hours until tender.
  7. When meat is cooked, add sugar, salt and pepper to taste. Add 2 tbsp flour and mix well. Cook about 15 to 20 minutes. If necessary add more spiced vinegar for proper consistency.
  8. Serve with potato dumplings, mashed potato or potato pancakes.
