Recipe: Sausage Stuffing

- 2 1/2 pounds lean fresh pork,ground
- 1 tsp each of thyme, salt, pepper
- 1/4 tsp nutmeg
- 1/4 cup finely chopped parsley
- 1 tbsp cognac
- 1 garlic clove, minced
- Cook ground pork along with thyme, salt, pepper, and nutmeg in a skillet until lightly browned. Break the pork up finely while cooking.
- Remove the cooked pork from the pan, drain any grease, and place into a large bowl. Combine with the parsley, garlic, and cognac and mix well.
Use sausage stuffing to stuff pork chops, chicken breasts, roasts, etc.
