3 to 3 1/2 lb (broiler-fryer) chicken
1/4 cup olive or canola oil
1/2 tsp thyme leaves
1/2 tsp oregano
1/2 tsp basil
1/2 tsp sage
1. Preheat oven to 350 degrees.
2. Clean chicken, remove giblets from internal cavity, and rinse chicken under cold water. Pat dry.
3. Combine olive oil and seasonings in a bowl. Mix well.
4. Rub seasoning mix over outside of chicken to coat evenly.
5. Please chicken in 8x8 roasting pan, and bake, uncovered 1 to 1-1/2 hours until chicken reaches an internal temperature of 185 degrees. **
6. Remove chicken from oven, and allow to rest for 10 minutes before carving.
** Because oven temperatures often vary always use a meat thermometer to test for doneness.
