Recipe: Scalloped Potatoes with Ham and Cheese

- 1/2 cup chopped onion
- 1/4 cup butter or margarine
- 1/4 cup flour
- 1/2 tsp dry mustard
- 1/2 tsp salt
- dash of pepper
- 2 1/4 cups milk
- 1 cup shredded Cheddar cheese
- 4 cups thinly sliced pared potatoes
- 2 cups ham, cut in large chunks
- Preheat oven to 350 degrees.
- Cook onion in butter in large saucepan until tender.
- Blend in flour, mustard, salt and pepper.
- Gradually add milk; cook over medium heat until sauce thickens, stirring so it won't stick.
- Stir in cheese.
- Save a little cheese to sprinkle over top.
- Arrange potatoes in greased baking dish, 12X8X2 inches.
- Top with ham, pour sauce over all.
- Cover with foil and bake for 45 minutes.
- Uncover, sprinkle with grated cheese and bake 15 minutes longer or until cheese is melted well and browned a little.
Good recipe for leftover ham.
