Recipe: Seafood Casserole Old Bay

1/2 tbsp. margarine
1/2 lb shrimp, peeled, deveined
1/2 lb lobster meat or scallops
1 clove garlic, minced
1/4 cup green pepper, diced
1/4 cup white wine
1 tsp lemon juice
1 egg, beaten
1/4 cup low fat mayonnaise
1 tsp dry mustard
1/4 tsp Old Bay Seasoning
1/8 tsp pepper
1 lb backfin crabmeat
1/4 cup seasoned bread crumbs
1/4 cup cheddar cheese, grated
paprika for sprinkling
- Preheat oven to 400 degrees.
- Melt margarine in skillet and add shrimp, lobster, garlic, and green pepper.
- Saute for 5 minutes. If you choose to use scallops, make sure all water is cooked out of scallops or bottom of casserole will contain too much liquid.
- Transfer contents from skillet into casserole dish.
- In small bowl, mix together the wine, lemon juice, egg, mayonnaise, mustard and seasonings.
- Mix until well blended.
- Gently mix crabmeat and bread crumbs into liquid.
- Pour mixture over seafood in casserole and sprinkle with cheddar cheese and paprika.
- Bake for 10 to 12 minutes.
