2 lbs peeled sweet potatoes
2 tbsp whipping cream
4 tbsp butter
1 tsp sugar
dash salt
Ground Cinnamon
1. Peel sweet potatoes, then cut into quarters lengthwise, and chop into chunks about 1-1/2" square.
2. In a 3 quart sauce pan place whipping cream, butter, sugar, and salt.
3. Heat over low heat, and stir until butter has melted.
4. Add sweet potato chucks, and stir well.
5. Cover, and cook over low heat 35 minutes, stirring occassionally.
6. Mash lightly with hand potato masher or a mixer until desired texture is reached.
7. Transfer to bowl for serving, and sprinkle lightly with ground cinnamon.
8. Serve immediately.
