Recipe: Smoky Beef Brisket

This is a long, slow cooking recipe, so start early. Don't rush the cooking, the time is required for a tender brisket.
- 1 tsp garlic salt
- 1 tsp onion salt
- 1 tsp celery salt
- 2 tbsp Worcestershire sauce
- 1 1/2 to 2 tbsp liquid smoke
- 3 pound beef brisket
- Combine the garlic salt, onion salt and celery salt, Worcestershire sauce, and liquid smoke in a small bowl.
- Trim the brisket of excess fat, but leave a small amount of the exterior fat.
- Rub the brisket with the Worcestershire sauce mixture.
- Place the brisket into a foil lined 9x13" or similar size baking pan.
- Pour any remaining sauce over it. Cover with aluminum foil and seal foil tightly around meat.
- Bake at 250° for at least 5 hours in order for the brisket to be tender.
- Unwrap and let stand 15 minutes before slicing.
- Pour juices into dish and serve on the side.
Serves 8 to 10.
