- 2 tbsp butter
- 1 1/2 tbsp white flour
- 2 1/2 cups milk
- 1/4 tsp white pepper
- 1/8 tsp cayenne pepper
- 1 pound crab meat
- 1 cup cream
- 2 hard boiled eggs
- 1 cup sherry
To make South River Crab Soup
- Melt butter, and stir in flour.
- Add milk, salt, and white pepper.
- Stir until well heated and thickened, about 8 - 10 minutes.
- Add crab meat and cream. Stir until well heated.
- Push the hard cooked eggs through a ricer, or chop very fine by hand. Add to the crab soup.
- Add sherry. Serve immediately.
