Recipe: Spicy Apricot Mold

Ingredients in Spicy Apricot Mold
- 1 can (16 oz) apricot halves
- 1 can (8 3/4 oz) pineapple tidbits
- 2 tbsp vinegar
- 1 tsp whole cloves
- 1 stick cinnamon
- hot water
- 2 (3-oz) packages orange jello
- 3/4 cup boiling water
- 3/4 cup apricot nectar
- 1/2 cup dairy sour cream
To make Spicy Apricot Mold
- Drain apricots and pineapple reserving syrups.
- Combine syrups with vinegar, cloves and cinnamon stick. Bring to a boil. Simmer 10 minutes, strain and add hot water to make 2 cups.
- Pour over one 3-oz package jello. Stir to dissolve.
- Chill until partially set. Fold in well-drained apricot halves, cut in half, and pineapple.
- Pour into a 6-cup ring mold.
- Chill until almost firm.
- Meanwhile, dissolve one (3-oz) package jello in boiling water. Stir in apricot nectar. Chill until partially set. Whip until fluffy. Swirl in sour cream. Pour over first layer.
- Chill at least 8 hours. Serves 8.
