- 3 pounds raw spinach
- 6 anchovy filets
- 2 hard-cooked eggs
- 1 tbsp parsley flakes

- Remove the stems from the spinach and wash the spinach leaves thoroughly under running cold water.
- Drain the spinach leaves and arrange spinach in a salad bowl.
- Cut anchovy filets in pieces and add to the spinach.
- Chop up the hard-cooked eggs very finely, and garnish the spinach salad with the chopped eggs and parsley flakes.
- Moisten the salad with French dressing.
