Recipe: Stir Fried Bok Choy

Stir Fried Bok Choy Ingredients
- 2 tbsps oil
- 2 tbsps butter
- 1 tsp minced garlic
- 6 green onions, cut into 1/2 inch slices
- 1/2 lb fresh mushrooms, cleaned and sliced
- 1 cup chicken broth
- 2 tbsps soy sauce or oyster sauce
- 1 tbsp cornstarch
- 1 tbsp cold water
- 4 cups coarsely chopped bok choy (1 medium)
To make Stir Fried Bok Choy
- Heat oil and butter in large skillet over medium heat.
- Add garlic, green onions and mushrooms.
- Cook, stirring occasionally, until mushrooms are golden.
- Remove with slotted spoon and reserve.
- Mix broth, soy sauce, cornstarch and water to blend; reserve.
- Add bok choy to skillet and cook over medium high heat, stirring constantly, about 2 minutes or until just crisp-tender. (Add more butter if needed to prevent sticking)
- Add mushroom mixture.
- Stir broth mixture well and stir into bok choy mushroom mixture.
- Cook, stirring about 2 minutes or until thickened.
