Sweet and Sour Spare Ribs I
- 5 pounds spare ribs
- 1-1/4 cups water
- 1/4 cup soy sauce
- 1/2 cup cider vinegar
- 1 tablespoon oyster sauce
- 1-1/4 to 1-1/2 cups sugar
- 1 piece ginger, crushed
- 2 cloves garlic, crushed
- salt and pepper to taste
- cornstarch and water for thickening
- Combine all ingredients except cornstarch and water.
- Simmer over medium heat in a covered pot until meat is tender (about 1 hour).
- Skim top of sauce for excess oil.
- Add seasonings and thicken with cornstarch and water.
- Serve over thinly sliced salted daikon and carrots.
