Tarragon Chicken Ingredients
- 6 boneless skinless chicken breasts
- 4 tbsps butter or margarine
- 1/4 cup brandy
- 1/4 cup minced onion
- 2 tbsps flour
- 1 tbsp tomato paste
- 1/2 cup chicken broth
- 3/4 cup dry white wine
- 3/4 tsp crushed dried tarragon
- 1/2 tsp salt
- 1/4 tsp white pepper
- dash Tabasco Sauce (optional)
To make Tarragon Chicken
- Preheat oven to 350° F.
- In a large skillet, brown chicken in 3 tbsps butter.
- Warm brandy, ignite and pour over chicken.
- When flame dies, remove chicken from skillet and place chicken in shallow 2 quart casserole.
- Reduce brandy until it barely coats skillet.
- Add to skillet remaining tbsp of butter and saute onion 3 minutes.
- Add flour to butter mixture and cook 3 mins, stirring constantly.
- Slowly stir in tomato paste, broth, and wine.
- Simmer briefly, stirring constantly until sauce is smooth.
- Add tarragon, salt, white pepper, and tabasco (optional).
- Pour sauce over chicken in casserole.
- Cover casserole and bake Tarragon Chicken for 30 minutes or until tender.
Makes 6 servings of Tarragon Chicken.
