5 pkgs (8-oz each) cream cheese
1 3/4 cups sugar
3 tbsp all purpose flour
1/4 tsp salt
1/2 tsp grated orange rind
1/2 tsp grated lemon rind
1/4 tsp vanilla extract
5 whole eggs, unbeaten
2 egg yolks
1/4 cup heavy creams
In a large bowl, beat cream cheese until fluffy. Mix sugar, flour, salt, orange and lemon rinds, and vanilla extract. Add slowly to cream cheese, beating until smooth. Add eggs and yolks, one at a time, beating well after each addition. Stir in cream. Turn into lightly greased (9 inch) spring forms pan. Bake at 500° F for 12 minutes. DO NOT OPEN DOOR; reduce heat to 200° F and bake for one hour longer. Remove from oven, cool on wire rack away from drafts. Cake will shrink from sides of pan and may crack in middle. Can be frozen if desired.
