Uses for Ground Nutmeg
Sprinkle on eggnog, whipped cream, vanilla ice cream, and on fruit. Sprinkle on seafood and chicken before broiling or baking. Season meat balls, meat loaf, chicken, spinach and corn.
Uses for Ground Ginger
Ground ginger has a spicy-sweet hot flavor commonly associated with gingerbread cakes and cookies. Ground ginger is an important ingredient in many Oriental dishes and is uniquely versatile. Use ground ginger in sweet potatoes, carrots, puddings, apple and pumpkin pie, marinades, baked beans, barbecue sauces, relish, and pickling. Ground ginger is also excellent when sprinkled on roasts, fish, pork, and steak before cooking.
Uses for Whole Cloves
Use whole cloves to add a unique flavor to to pork roasts or ham by studding the meat with whole cloves before roasting in the oven. Add whole cloves to pickled fruits and vegetables, sweet syrups, meat marinades, gravies, soups and stews. Add whole cloves to spiced punches, wines and liqueurs. Stud limes, lemon, orange or pineapple slices with whole cloves to garnish a beverage. Freshen your home or restaurant by simmering whole cloves and cinnamon sticks in a tea pot.
Uses for Stick Cinnamon
Cinnamon Sticks are perfect for use with long-cooking meals or simmering vegetables. Cinnamon sticks add a warm, spicy flavor to meals and drinks. Cinnamon sticks are a favorite way for seasoning ciders, teas, hot chocolate, puddings, custards, and applesauce. Stick cinnamon is often used in pickling and preserving or as a garnish.
Recipe for Spiced Apple Cider
- 1 tsp Tones Whole Cloves
- 1 gallon Apple Cider or Apple Juice
- 1 orange
- 4 Tones Whole Cinnamon Sticks
- 1/2 cup sugar
- Combine Tones Whole Cloves, Cinnamon Sticks, apple cider and sugar in a large non-stick sauce pan.
- Peel and slice orange, and add to pan.
- Heat over medium to high heat to a boil.
- Reduce heat and simmer for 30 minutes.
Recipe makes 1 gallon of Spiced Apple Cider. Alternate method of cooking is to place all items into a crock pot, heat to a boil, and simmer for 30 minutes before serving.
Recipe for Cinnamon Ornaments
- 1 cup Tones Ground Cinnamon
- 1 tsp Tones Ground Ginger
- 1 cup applesauce
- 1 tsp Tones Ground Nutmeg
- 1 tsp Tones Ground Cloves
- Mix Tones Ground Cinnamon, Ground Nutmeg, Ground Ginger, and Ground Cloves together in a medium sized bowl.
- Add applesauce a little at a time until moist and pliable. If mixture is too dry, add an additional 1 to 2 tbsp of applesauce.
- Roll out the dough to a scant 1/4 inch thickness on an ungreased surface that has been sprinkled with additional Tones ground cinnamon.
- Use sharp edged cookie cutters to cut shapes as desired.
- Place cut shapes on a level surface and allow to dry fro 4 to 5 days. Ornaments will lighten in color as they dry.*
- Use as Christmas tree ornaments or to decorate packages.
*Use craft or floral wire that has been bent into a U shape and inserted into top of each ornament
before drying to serve as a hanger for yarn or ribbon.
