Recipe: Tortellini and Vegetable Soup

Tortellini and Vegetable Soup Ingredients
- 1 quart chicken stock (or 2 cans low sodium chicken broth)
- 1 carrot, sliced
- 1 stalk celery, diced
- 1 cup cut-up fresh green beans
- 1 tomato, peeled and chopped
- 1/2 tsp oregano
- 9 ounces fresh cheese tortellini
- 1 cup chopped broccoli
- 3 green onions, sliced
- 1/4 cup grated Parmesan
To make Tortellini and Vegetable Soup
- Bring chicken stock to a boil; add sliced carrot, diced celery, cut green beans, tomato, and oregano leaves.
- Return to a boil, then immediately reduce heat to low; cook 5 minutes.
- Add tortellini; return to a boil, then cook on low for 5 more minutes.
- Add broccoli and green onions.
- Cook 5 minutes longer.
- Place Parmesan Cheese in a separate bowl for serving at the table.
- Serve the Tortellini and Vegetable Soup immediately. Let each person add Parmesean Cheese to top of their bowl of soup.
Serves 4.
