Recipe: Vegetable Curry

Vegetable Curry Ingredients
- 1 large onion, chopped
- 1 tbsp vegetable oil
- 2 tbsps pickling spices
- 1 tsp caraway seeds
- 1lb can tomatoes (or tomato sauce or diluted tomato paste)
- 1/2 tsp red pepper or cayenne
- 1/2 tsp paprika
- 1/2 tsp chili powder
- 1/2 tsp ginger (fresh if possible)
- 1/2 tsp black pepper
- 1 tsp curry powder
- 1 tsp salt
- 1lb cut up vegetables (cauliflower, green beans, peas, eggplant, turnip, chickpeas, broccoli, carrots, for example)
To make Vegetable Curry
- Saute onion in oil with pickling spices and caraway seeds.
- Add tomatoes with remaining spices and salt.
- Cook for 15 to 30 minutes, or until no longer watery.
- Add vegetables and simmer until tender.
Serve Vegetable Curry with rice and yogurt or sour cream.
