4 1/2 to 5 1/2 cups flour
3 pkg dry yeast (scant 3 tbsp yeast)
1 cup wheat germ
1/4 cup sugar or 1/8 cup honey
1 tbsp sea salt
2 tbsp shortening
1-1/4 cup hot tap water
peanut oil
Combine 1-1/2 cups flour, yeast, wheat germ, sugar or honey, and salt. Stir with spoon. Add shortening, hot water and beat with electric mixer 2 minutes. Scrape sides of bowl often. Add 1 cup flour and beat with mixer thoroughly. Stir in remaining flour with spoon. Knead hard for 5 to 10 minutes. Cover with wax paper, then a towel and let rise about 30 minutes. Punch down and divide in half. Shape in balls. Place in two greased one-pound coffee cans. Brush tops with peanut oil. Cover with plastic wrap and refrigerate 2 to 24 hours. Let stand at room temperature 10 minutes. Bake at 375° for 30 to 40 minutes. Loaf will sound hollow when properly baked.
