Oven Preparation

1. Pre-cook 2 pounds of chicken meat and cut into serving size pieces.
2. In a full metal steam table pan, add 12 cups of boiling water, 2 oz butter or margarine (optional), pre-cooked/chopped chicken, 1 pound sausage cut into serving size pieces, and contents of Zatarain's Jambalaya Mix.
3. Stir thoroughly; then cover tightly with lid or foil.
4. Place into a preheat 400° F oven and bake for 35 minutes or until rice is cooked.
5. Remove cooked rice from oven (some liquid should be present in the Jambalaya) and let stand for 5 minutes.
6. Just before serving, fluff with a fork to fluff rice and mix flavors.

Makes 46 1/2 cup servings with a #8 scoop. This mix contains 410mg sodium. Zatarain's Original Jambalaya Mix contains 700mg Per Serving.

Family Size Stovetop Recipe

• 1 Cup Jambalaya Mix
• 2 Cups Water
• 1 tbsp Butter
• 1 cup cooked Andouille Sausage
• 1 cup cooked chicken in bite size pieces

1. Mix the rice mix together to blend the seasonings. Measure out 1 cup.
2. Bring 2 cups of water to a boil in a large saucepan.
3. Add remaining ingredients. Return to boil, cover, reduce heat to a simmer. Cook for 20 to 25 minutes (or until water is absorbed). Remove from heat and allow to stand for 5 minutes. Fluff before serving.
