Recipe: Zucchini Boats with Spinach

Zucchini Boats with Spinach Ingredients
- 10 oz pkg frozen chopped spinach
- 3 medium zucchini
- 4 slices bacon
- 2 tbsps flour
- 1/2 cup milk
- 1/2 tsp garlic salt
- pepper to taste
- 1/3 cup shredded Cheddar cheese
To make Zucchini Boats with Spinach
- Preheat oven to 350 degrees.
- Cook spinach according to directions on pkg; drain.
- Trim ends of zucchinin and cook whole in boiling water for 10 minutes.
- Drain, cut in half lenthwise, scoop out centers.
- Fry bacon slices, drain and crumble.
- Chop zucchini center pulp and add to spinach.
- Blend flour and milk; add to spinach mixture.
- Cook over medium heat, stir in garlic salt and pepper.
- Cook until mixture thickens.
- Place zucchini halves in baking dish and spoon in spinach mixture.
- Top with cheese and crumbled bacon.
- Bake 15 to 20 minutes.
Servings: 6 to 12 depending on how much you love zucchini.
