- 1 cup fine crushed crackers or cracker crumbs
- 1/2 cup fine bread crumbs
- 1 egg, beaten
- 2 tsp Old Bay Seasoning
- 1 tbsp mayonnaise
- 1 tsp dry mustard
- 2 tsp minced onions
- Grate 2 1/2 cups of zucchini into cole slaw cut. Drain in a colandar.
- In a large boil combine the remaining ingredients, then add grated zucchini and mix well.
- Form into about 8 cakes.
- Either fry or broil until light brown. Gently turn and cook other side until brown.
