Ingredients in Zucchini Pineapple Bread
- 3 eggs
- 1 cup oil
- 2 cups sugar
- 2 teaspoons pure vanilla extract
- 2 cups shredded zucchini
- 20 ounce can crushed pineapple, well drained
- 3 cups flour
- 2 teaspoons baking soda
- 1/4 teaspoon baking powder
- 1 teaspoon salt
- 2 teaspoons cinnamon
- 3/4 teaspoon nutmeg
- 1 cup chopped walnuts
To Make Zucchini Pineapple Bread
- Preheat oven to 350°.
- Mix eggs, oil, sugar and pure vanilla extract until thick.
- Mix together flour, baking soda, baking powder, salt, cinnamon, nutmeg.
- Combine dry ingredients with egg mixture.
- Fold in zucchini, crushed pineapple, and walnuts.
- Mix all ingredients well.
- Pour ingredients into a greased loaf pan.
- Bake 1 hour at 350°.
