2 lb zucchini
2 tbsps butter or margarine
1/2 cup water
2 shallots, chopped
1/8 tsp garlic powder
2 cans chicken broth

1. Do not peel zucchini, scrub and slice thinly.
2. Melt butter and saute zucchini and shallots.
3. Add garlic and water; cook until zucchini becomes wilted, stirring frequently do not let brown.
4. Whirl in blender until completely smooth.
5. Add chicken broth and taste for seasonings. Adjust seasonings if necessary.
6. Serve hot or cold.
