August - What is for Dinner

Popeye's is a weekly STAPLE at my place, Cookie! LOVE me some Popeye's!

Tonight I tossed a huge portion of Fusili Pesto w/ Chicken & Sausage w/ a bag of fresh baby spinach and got enuf for two meals- supper at home, and my midnight meal at work. Yummy!
 
Yesterday I roasted a chicken and made some mashed potatoes and gravy.
Today I smoked chicken wing drummets. I like to take the smoked wings and roll them in some seasoned flour and pop them in some hot oil so I can get a crust on them. Then I dip then in a mixture of my fav bbq sauce and honey. I laid fresh rosemary and garlic cloves underneath the wings on the smoker rack ...it smells so good!
 
I had a dairy-farmer friend (I went to school w/ he and his wife) over for supper tonight. He was intrigued by my Alaska years and wanted to hear stories, so of course I decided to go w/ an Alaskan menu- but also wanted to show adherance to his dairy prefrences as well, so I used lotsa milk/cream and cheese... We started w/ a mini wheel of brie, a wedge of cheddar, some proscuitto, crackers & cranberry relish. The entree was salmon/spinach pie w/ sides of chilled dilled string beans & grape 'maters, caramel apple salad, and dessert was blackberry coffeecake w/ whipped cream. He seemed to love it all so I packed him up w/ a huge Tupperware of leftovers... his wife is out of town so it'll be perfect for him for tomorrow!
 
I really like the sound of the blackberry cake. Can you post the recipe and please can you post a detailed recipe on fried green tomatoes. I've never had them.

Blackberry Sour-Cream Coffee Cake

1 stick butter, softened
1 cup sugar
2 eggs
1 cup sour cream
2 cups sifted unbleached all-purpose flour
1 tsp. salt
1 tsp. baking powder
1 tsp. baking soda
1 tsp. vanilla extract
1 cup blackberries or huckleberries

Topping:
1/4 cup unsalted butter, softened
1/2 cup firmly packaged light brown sugar
1/2 tsp. cinnamon

Cooking Instructions:

Preheat oven to 350 degrees. Grease an 8-inch square baking pan.

In a mixing bowl, cream the butter and sugar at high speed until pale and fluffy. Add the eggs one at a time, beating thoroughly after each addition. Add the sour cream, beating until smooth. Sift together the flour, salt, baking powder, and baking soda and add to the egg mixture. Add the vanilla and blend thoroughly. Fold in the blackberries.

In a small bowl, combine the ingredients for the topping. Pour half of the batter into the prepared pan and sprinkle with half of the topping mixture. Add the remaining batter and sprinkle with the reaminder to the topping mixture. Bake approximately 35 minutes, or until a toothpick inserted in the center comes out clean.

Fried Green Tomatoes

4 large green tomatoes
2 eggs
1/2 cup milk
1 cup all-purpose flour
1/2 cup cornmeal
1/2 cup bread crumbs
2 teaspoons coarse kosher salt
1/4 teaspoon ground black pepper
1 quart vegetable oil for frying

Slice tomatoes 1/2 inch thick. Discard the ends.
Whisk eggs and milk together in a medium-size bowl. Scoop flour onto a plate. Mix cornmeal, bread crumbs and salt and pepper on another plate. Dip tomatoes into flour to coat. Then dip the tomatoes into milk and egg mixture. Dredge in breadcrumbs to completely coat.

In a large skillet, pour vegetable oil (enough so that there is 1/2 inch of oil in the pan) and heat over a medium heat. Place tomatoes into the frying pan in batches of 4 or 5, depending on the size of your skillet. Do not crowd the tomatoes, they should not touch each other. When the tomatoes are browned, flip and fry them on the other side. Drain them on paper towels.

Thank you for the recipes. I have seen fried green tomatoes on loads of programmes and always wanted to try them.

We had oven chicken with teriake sauce with mashed potatoes and a Cesar salad, we ate outside on the deck. It was such a nice day today, went to a Farmers Market today bought sweet green peppers, corn, green beans, tomatoes, zucchini and a cucumber. I made the corn already for tomato's dinner, I'm making beef taco's with onion and sweet peppers, salsa w/ sour cream & grated cheddar cheese. Cookie :)
 
I made burrito casserole earlier today.
I also made us a pizza with fresh mozerella, parm and pepperoni. I made the crust from scratch. It was yummy.
I also made sugar cookies.

What's Cooking.....

I'm making meat-loaf, instead of tacos for dinner tonight. I chopped up onion & green pepper. I used (1/2 pkg.) seasoning mix, with 1/4 cup of milk.I also put some cumin, salt & pepper into the ground beef. It's cooking in the oven right now.

Side-dish is baked potatoes w/ sour-cream & grated cheddar cheese and fresh green beans & fresh corn on the cob.

I want to make the zucchini bread this week. Cookie :)

I just don't know what to plan for dinner today.

The weather is cold, the sky is dark grey, raining cats and dogs, bleak and windy. It is truely miserable outside.

I leaning towards
Pork loin
Runner beans
Broccoli
Jersey Royals
Gravy
Apple sauce.

or

Beef cobbler
Peas
Mashed pots

OO I'm torn.:confused:

Big-Bagel w/ Cream Cheese & Chicken Nugget's, just didn't feel like cooking. Cookie :)
 
Tonight's canasta night so I'll be cooking for four of us.

I plan to grill some bacon-wrapped tequila-marinated chicken tenders and serve them w/ pico de gallo and guacamole, fried flour tortilla-wedges, spicy pinto beans & rice, watermelon, flan and Bud Lite w/ Lime.
 
I have no idea what to make for dinner tonight, I had my other Big Bagel for breakfast this morning, it was a veggie bagel w/ cream cheese w/coffee, the other one I had for dinner last night was jalapeño pepper, they were both really Good! Maybe I will just order out Chinese, for lunch & dinner. Cookie :)
 
I made stuffed green bell peppers for dinner.
We had hotdogs with homemade sauce for lunch.

I made a batch of these today.

Jalapenos - Bread & Butter Style

Makes 6 pints

4 lbs jalapeno peppers
2 lbs onions
3 cups white vinegar
2 cups sugar
2 tablespoons mustard seeds
2 teaspoons turmeric powder
2 teaspoons celery seeds
1 teaspoon ginger powder

Thinly slice jalapenos and onions and cold pack into jars.
Use rubber gloves for handling jalapenos.
Place remaining ingredients in large pan and bring to a boil.
Pour hot mixture into jars, over the peppers and onions, leaving 1/4 inch headspace.
If you run short of the juice, top with boiling water.
Remove air bubbles by running a knife around the inside of the jars.
Adjust caps.
Process 10-minutes in boiling water bath.
Yield: about 5-6 Pints.

Tonight, mom's cooking Tuna steak. I got the recipe for a site. the site has info abt many recipes .. mom is just trying them for us :)

We had Frozen "Special" Pizza and I made some home-made zucchini bread this morning, I posted the recipe with the other zucchini recipe, it's under Breads it turned out really Good.

I have been eating really strange today I had a McDonald's Chocolate Fudge Sunday for lunch today and mini chocolate hazelnut Biscottis (store bought, but Good!) for Breakfast and I tried a piece of my Home-made Zucchini Bread and 1 piece of pizza today.

It was a cold day today with no Sun. :( Cookie
