Bread machine sandwich bread

Add in order that your particular machine says to do..

3 cups bread flour
1 tsp salt or salt substitute
1 and 1/2 TBS dry milk powder
1 and 1/2 TBS sugar
1/4 tsp cushed asorbic acid tablet
1 tsp bread yeast (make a hole in flour and put yeast into that)
! and !/2 TBS butter,,,cut in small pieces
1 and 1/4 cup water

Put in order the way your machine says to do...Mine puts dry and then wet....with a place on top to put yeast after you close top...they are all different though so follow your machine instructions....
Put machine on bake and then on sandwich...or whater your machine calls it...
 
Cheddar Bread (1-Pound Recipe)

1/2 cup water (70º to 80ºF)
1 large egg
3/4 teaspoon salt
2 cups bread flour
2/3 cup shredded sharp Cheddar cheese
4 teaspoons nonfat dry milk
4 teaspoons sugar
1 teaspoon Fleischmann's® Bread Machine Yeast

Measure all ingredients into bread machine pan in the order suggested by manufacturer, adding cheese with flour.

Process on basic/white bread cycle; use medium/normal crust color setting. Do not use delayed-bake feature. Remove bread from pan; cool on wire rack.


Yield:
"1 Loaf"


NOTES : Do not make loaves larger than recommended by bread machine manufacturer. Use the 1-pound recipe if your bread machine pan holds 10 cups or less of water. Use the 2-pound recipe if the pan holds 13 cups or more.

To measure liquid, pour into transparent liquid-ingredient measuring cup; read measurement at eye level.
To measure flour, spoon into standard dry-ingredient measuring cup; level with straight-edged knife.

I want to add some "extras" to my breads like raisins, bran, etc. How much can I add then without ruining the bread?

The more you add to the basic dough, the more it will weigh it down and make it harder to rise. Limit the extras to 1/4 cup per cup of flour.

How can I add Sourdough starter to my recipe?

Count half of it as liquid and deduct that amount from the liquid listed in the recipe. For example, if you use one cup of starter, reduce the liquid in the recipe by 1/2 cup.

My whole grain breads just don't rise as high as my white breads. Am I doing something wrong?

Heavier breads such as the whole-grain loaves containing whole wheat,rye, oatmeal, etc.and breads with a large amount of nuts, seeds, grains and cheese will not be as tall as simple white breads.

My breads all have a crack around the bread or on top of the loaf.

Your dough may be too dry. Next time add 1 to 2 tablespoons more liquid. If you have a programmable machine, increase the rising time.

Will refrigerating the dough kill my yeast?

No. You can refrigerate the dough for about 5 days. It does continue to grow, but at a slower rate. Be sure and punch it down every morning.

My breads always have burn crusts.

Set the Crust Color to Light.
Choose the Sweet Bread setting if your machine has it.
Reduce the amount of sugar.
Remove the loaf from the machine 5 to 10 minutes before the Bake cycle ends.

I have a 2 pound bread machine but yesterday I made a 2 pound recipe that overflowed the pan.

Not all 2 pound bread machine pans are the same size. We suggest you start with the medium size recipe first to determine if it's a high riser.

I want to freeze my dough for rolls. Should I make them and freeze them?

It's best to shape your rolls and then freeze them. When you are ready to bake, just remove the rolls from the freezer, let them come to room temperature and let them rise again. Then bake as usual.

How can I add seeds to the top of the Bread?

Check your manual for baking cycle times and set a timer to ring just before the bake cycle starts. Combine an egg white and 1 tablespoon water. Very gently brush this mixture over the top of the dough. Sprinkle liberally with seeds of your choice such as caraway, sesame or poppy.

When a recipe calls for butter or margarine should I melt it first?

It's not necessary, but if you are using 2 tablespoons or more, just cut the butter or margarine up in small pieces to facilitate the mixing.

How do I use buttermilk powder in a recipe.

Use it just as you would non-fat dry milk powder. Add 3 to 4 tablespoons of powder per cup of water.

I can't find bread flour in my grocery store. I would like to use all-purpose flour.

You can add 1 1/2 teaspoons of vital wheat gluten per cup of flour to your all-purpose flour and get a "bread flour". You can find vital wheat gluten in most health food stores or you can order from the King Arthur Flour Company. Their toll free number is 1-800-827-6386

My husband and I just cannot eat all the bread that my bread machine makes. I hate to throw it out.

Try slicing and freezing the individual slices in individual plastic bags.That way you can take out the bread as you need it. Also you might want to make some croutons or bread pudding with those leftovers.

Is it necessary to proof yeast in water first before placing it in the bread pan?

No it is not. You can place your liquid in the bottom of the bread pan, followed by the rest of the ingredients and add the yeast last. It's especially important to keep the yeast dry if you plan to bake the bread on a delayed timer cycle.

How much yeast is in a 1/4 oz package?

About 2 1/4 teaspoons.

Can salt be omitted from a bread recipe?

Salt controls the yeast's activity. It prevents breads from rising too rapidly, then collapsing during baking. The amount of salt in a recipe can often be reduced by as much as one-half, but it shouldn't be omitted entirely.

1 1/2 Lb. Loaf
1 1/4 cups Water

One Pound Loaf:
1 Teaspoon active dry yeast
1 Teaspoon cinnamon
3 1/2 Tablespoons sugar
2 1/4 Cups bread flour
1 Teaspoon salt
4 teaspoons dried buttermilk or dry milk
1/2 cup apple pie filling
1 Tablespoon butter
3 Ounces apple juice



Instructions
Add ingredients according to your machine directions.
 
Banana Bread #3


1/4 cup buttermilk
1 egg
1/4 cup unsalted butter or canola oil
1 teaspoon vanilla extract
1/2 cup banana mashed
1 cup all-purpose flour
1/2 cup sugar
1/4 teaspoon salt
1/4 teaspoon baking soda
2 teaspoons double-acting baking powder


Load ingrediets according to your Manufacturer's instructions. Load vanilla; scoop in mashed bananan, scatter baking soda and powder over dry ingredients.

Bake on your machine's quick cycle.
 
Basil Tomato Parmesan Bread


1 Lb Loaf:
1/2 Cup water
1/4 Cup milk
2 Tablespoons olive oil
1 Teaspoon sugar
1 Teaspoon salt
2 Teaspoons dried basil
1/3 Cup grated Parmesan cheese
2 Cups bread flour
2 Teaspoons yeast
1/4 Cup sun-dried tomatoes chopped



Instructions
Add all ingredients except tomatoes in the order suggested by bread machine instructions. Set machine for white bread, medium crust. Add tomatoes when machine beeps.
 
Machine Sourdough Bread (abm)


3/4 tablespoon Yeast
2 1/4 cups Bread Flour
1 tablespoon Sugar
1 tablespoon Oil
1 cup sourdough starter
1/2 cup Warm Water
1 teaspoon Salt



Instructions
Yields 1 Loaf

All ingredients except the water should be at room temperature beforestarting.Add the ingredients to the pan in the order listed.Select "White Bread".Press "Start".
 
Bimini Bread

3/4 cup Hot Water
1/2 cup Oats
1 1/2 teaspoons Molasses
1 tablespoon Butter or Vegetable Oil
1/2 teaspoon Salt
1 1/2 cups Bread Flour
1 tablespoon Dry Yeast



Instructions
Soak the oats, molasses and butter in the hot water for 2 minutes. Add to the bread machine along with the other ingredients. Follow manufacturer's directions for your machine, using the cycle you'd use for white , sweet bread, light-to-medium setting, and the equivalent of 2 cups of flour. I found in the Regal Bread Machine that I had to add 2 additional tablespoons of flour to get a good dough ball.

Per Serving: 90 calories, 3 grams protein, 16 grams carbohydrate, 1 gram fat, 15 percent calories as fat, 0.7 grams fiber, 3 milligrams cholesterol, 70 milligrams sodium. Exchanges: 1.1 bread, 0.2 fat.

Breadmaker Mix And Recipes

13 cups Bread Flour
2 tablespoons Salt
1/2 cups Sugar
1/2 cups Instant Non-Fat Milk Powder


Combine all ingredients in a large bowl. Stir together to distribute evenly. Label and package in six(2 1/4 cup) containers, if using a 1-pound-loaf breadmaker, or in four(3-1/3 cup) containers for larger capacity breadmakers. Store in a cool, dry place. Use with 6 months. Makes about 14 cups.

To make small loaf: 1-1/2 tsp active dry yeast; 2 1/4 cups breadmaker mix; 1tbsp butter or vegetable oil; 3/4 cup warm water. To make large loaf: 2 tsps active dry yeast; 3 1/3 cups breadmaker mix; 1 1/2 tbsp butter or vegetable oil;1 1/4 cup warm water. Mix and bake on light setting, following manufacturer's instructions,

Variations:

Cinammon raisin: to the basic recipe, add 1/2 cup raisins and 1 1/2 tsps ground cinnamon. Glaze with powdered sugar glaze, if desired, while still warm.

French bread: eliminate butter or vegetable oil. Sweet Bread: Add 1 tbsp. sugar with dry ingredients. Break one egg into measuring cup, fill cup with water to amount called for in recipe.

Herb Bread: add 1 1/2 tsps. dry herbs(rosemary, basil, dill, etc..)

1 cup Lecithin granules
1 tablespoon Vitamin C powder
1 tablespoon Ginger ground



Instructions
Mix all ingredients and store in tightly closed glass jar.

Add to breadmaker in amount equal to yeast with other dry ingredients. Start machine.

Apparently, the ginger gooses the yeast and makes it act more swiftly, the ascorbic acid strengthens the gluten, and the lecithin aids the oil in causing the strands of gluten to slip against each other more easily and thus rise better.

4 cups powdered milk
3/4 cup Lecithin Granules
3 tablespoons. vitamin C powder heaping
2 tablespoons. ginger
3 tablespoons. cornstarch



Instructions
Blend until smooth. Store in airtight containers. Room Temp. Use 2 teas. enhancer in each loaf of dough.
