Dinner Tonight? (2-2-09)

Whenever I think of meat pies I recall the movie I had seen with Johnny Depp and he was a barber slasher. The bodies were used for very famous meat pies. Elton Brown claims to be the great grandson of the man that married the woman that actually made the pies and was the one with the original meat pie recipe and had brought it to the states.
I don't know what that has got to do with dinner tonight, I would avoid them meat pies, lol.
 
I cut up a whole chicken. Seasoned it with sea salt, pepper, garlic and onion powder. Then put it into my stovetop smoker for about 20-25 min to get a light smoke flavor on it. Then I dipped the pieces into buttermilk and then flour. Fried it up til crispy golden brown. I made some foccacia with garlic, parm cheese, carmelized onions and sundried tomatoes on top to have with it. I dipped my chicken into honey bbq sauce but Jon had his plain. We both thought it was yummy.

Eddie made us some oven-fried pork chops, spinach souflet, and tater rounds What a nice meal to come home to!!!!:p I love my husband, he is so wonderful!!! Not to mention a good cook too:D

How do you make spinach souflet? I love spinach and so does my fil.

The chicken was really good but I got the apartment to hot. Between the smoker and the oven on making bread the AC froze up on me again. It is 11:44 pm and Jon and I have the heat on full blast to thaw it out so we can go to bed. I don't know whose bright idea it was to design a building with the intake for the ac about three feet from the stove.
 
janie and Cath (and Eddie) your suppers sound DELISH!

Don't know if I've ever mentioned it or not- but I like to make a creamed spincah gratin- all cheesy and savory. I make sure to make enuf to have leftovers- then next day I add cooked rice and more cheese and use the spinach/rice stuffing to fill chicken breasts, pocketed pork chops, or fish fillets. Always yummy!

Tonight my supper was an onion & swiss cheese omelet, buttered rye toast, a mango and some grapes.
 
Yesterday dinner was quick. I went to paint for an art auction so I just threw together some pasta with yellow tomato sauce from last years garden and some chicken sausages.

Tonight I’m going to make venison Salisbury steak with crimini mushrooms and roasted potatoes.
 
jfain, what type of yellow tomatoes did you grow? I am ordering my seeds and people have suggested that I try some yellow varieties. I want some that are nice to cook with, not to look at. I am debating on getting Yellow Boys but I can't find much information on them.
 
A member at another forum inspired my supper tonight of Kielbasa, braised cabbage and mashed potatoes.

Tomorrow night? IC's got me thinking about and craving beef stew w/ a biscuit-top!
 
I made roasted tomato avocado salad with grilled shrimp for dinner.
Jon and I tried out the new Dairy Queen Grill & Chill they opened a few weeks ago for lunch. We had cheese burgers and onion rings. For dessert I had a small strawberry cheesecake blizzard and Jon had a vanilla ice cream cone. We took his Dad a large banana cream pie blizzard. The cheese cake blizzard had tons of strawberrys and chunks of chocolate in it. It was so good! My fil loved his blizzard. Calories were had by all lol.

I keep DQ ice cream sandwiches in my freezer. They sell 6-packs for just a few dollars. Sis pointed out a while back that they are low-fat and I didn't even know it! Heck- knowing that- now I can double-fist'em! Hee-Hee!
 
Ice Cream

MMMMMM, an ice cream thread, lol. My wife got me a pint of Dove Ice Cream a few weeks ago. Irresistible Raspberry. I opened it and on the top was a thick layer of chocolate gnash. After breaking through the gnash I found a raspberry ice cream with a raspberry sorbet swirled in. It was so good....I can't wait for summer to have some more.

I made herb chicken noodle soup to send to my sick five year old niece tomorrow. For Jon and I we had baked pepperoni rigatoni with pizza hut style bread sticks. I still have to make my niece some fresh bread to send along with her soup.
 
We are going through meatless Fridays for Lent. I made deep dish pizzas for dinner. I made 1 cheese, 1 with an olive topping, 1 with fresh green peppers and red onions slices and chopped garlic. My son is home for spring break so I was able to make one with mushrooms. I sauteed portabella slices in a vinaigrette with Italian seasonings and then used them for the topping. My pizza sauce is from my canned tomatoes. I throw a pint of tomatoes into the processor with chopped garlic, oregano, basil, red pepper flakes, some thyme, salt and pepper and then process. I drizzle in about 1/4 cup of olive oil and emulsify it into the tomatoes. I baked the pizzas in cake pans and 1 cast iron skillet. I put a few tablespoons of olive oil in each pan before putting the dough into them and the crust when done has like a fried texture to it. Everyone here loves them that way.
 
Today was a really nice sunny day, we went out for lunch had stuffed tilapia, with rice pilaf and tomato-salsa, zucchini strips with sweet red pepper strips and then shrimp with scallops in cream sauce and another rice creamy dish, we shared. They made at the table, fresh guacamole, they put red onion chopped , garlic, fresh tomatoes, lime juice, fresh orange juice, cilantro, peppers-hot. MM, so Good! My Nieces gave us the gift card for Christmas, we finally got to use it.

It was such a Great Day for a Margarita! :p

For Saturday nights dinner I made shells with pesto, out of a jar (classico).
sliced up smocked turkey sausage with garlic, Texas Toast. I got a bag of lite Caesar salad to go with it. Cookie :)

Per IC's lead, Friday Night I made beef stew served under a light, flaky biscuit crust. After reading his post yesterday, I was hungry for this all day today, so tonight I pulled a quart ziplock containing bits of prime rib "scrap" from the freezer and that's exactly what I made! YUM!

Saturday Night it's supper for my young finicky nephew and his grandparents (my sister's in-laws) so my menu will be geared toward Layne's tastes: summer "scroodle" pasta salad, day-pickles, marmalade-glazed drumsticks, ranch-seasoned jo-jo wedges, blackberry-lemonade and ice-cream sandiwches.
