Cathy, next time try rubbing the ras el hanout under the skin. Yeah, I know it's a PITA technique. But you won't believe the difference it makes.

Also, while I recognize that a crockpot is essentially a machine for braising, I wonder if there's be a taste difference if you made the same recipe in your tagine?

I would say their would be a difference. You wouldn't need as much liquid so the flavors I think would be more concentrated. I want a tagine! DH says I have too much kitchen stuff already and I have no place to put one but they aren't that big. I might just bring one home anyway and he will have to deal with it.
 
Just remember that some are designed to be used directly on the stove and some not.

As a general rule, those that are glazed should be used in the oven, or with a heat diffuser on the range. Unglazed tagines can be used directly over the burner, albiet on very low heat.

Tagines are one of those things you think about, and think about, until finally breaking down and buying one. Once you do that, you want more than just the one. I've got two cooking tagines, now, and have been studying on serving tagines.

Well you know I tell him he should at least be happy he gets to benefit hugely from my hobby. If I collected baby dolls for instance he would still have to build a cabinet and would get nothing for his work but a baby dolls display.

Dinner tonight is Stir fried vegetables and grilled miso marinated jumbo shrimp.

I go to Trader Joe's for turkey balls ( 1lb. bag frozen) lol... lol... :D Aldis owns Trader Joe's. I bought my Vodka sauce their & I just :rolleyes: put the turkey balls in the sauce and let it cook together. Cookie :)

Tonight I made one Big Sweet Red Pepper stuffed w/ wild mushroom couscous and (frozen) stuffed chicken breast stuffed with broccoli. Cookie :)
 
Friday Night? I need to get groceries, but I pulled a rack of baby back ribs from the freezer and I've got some nice snow peas, a red bell pepper, a finger of ginger, and a lemon, so proll'y an Asian-inspired lemon-ginger glazed rack of ribs, stir-fried snow peas, and a mound of jasmine rice.
 
I made hotdogs with homemade sauce.
We went to Arbys for lunch. I had one of their farmhouse chicken salads. What a rip off for $5. They looked nothing like the picture and were not anywhere as big. It was nothing but a cup and a half of iceberg lettuce with a few tiny pieces of grilled chicken and a bit of chopped tomato. Maybe a Tb of bacon bits. There is no place in this town to get a good salad. I told Jon from now on I will stick with making my own.
Tomorrow Im making garlic and herb roasted chicken with home made dressing and salad.

janie- I think one of my all-time FAV simple meals is roast chicken and a salad- or a steak and salad. Nunthin' fancy- just done simply- SO delish and saytisfying!
 
Me too I just LOVE a roasted chicken from the oven. There is no more succulent chicken than one you do yourself.

Tonight it's grilled turkey burgers and salad with gorgonzola-yogurt dressing.
 
Cooking

I like getting a bag of salad and then some grilled chicken put it right on top of your salad (warm chicken) then top it of with shredded cheese of your choice & dressing. You can add tomatoes,mushrooms, chic-peas, olives, peas etc. There is nothing like your own salad! ;)

Tonight I'm making 5 (small) chicken breast (for Sat. nights dinner.) I bought some Cacciatore Simmer Sauce, side dish is Pasta with Eggplant & Zucchini (it was in the frozen section.) Cookie :)

Im also trying Yellow Rice (ZATARAIN'S) brand.
 
Roasted chicken is really good this time of the year when I have fresh sage and thyme in the garden. Season and stuff the bird with a head of garlic cut in half and all of the fresh thyme and sage you can shove into it. I put a couple of leaves of sage and two pats of butter on each breast in between the skin and meat. Rub all over with olive oil and sprinkle liberally with McCormicks Rotisserie Chicken Seasoning and fresh cracked pepper. Tie the legs together and tie down the wings. I either use my rotisserie or my Nuwave oven to roast it in. Those Nuwaves are not something I would recommend to anyone. Those plastic domes are junk. Everytime I use mine I keep looking for it to crack.
 
This weekend?

I'm attending a team barbecue w/ my friend Minot Saturday night. He coaches a junior high girls track team and the coaches are throwing a pork chop cook-out. I was asked to make something- I'll take brownies and oatmeal cookies.

Sunday my niece graduates from high school and my sis is throwing an open-house w/ a pulled-pork barbecue sandwich spread and expecting a crowd. In addition to helping her hubby mow and spruce-up the yard and pool in time for the crowd's arrival, I was also asked to make something sweet (Hailley doesn't want cake, so I'm doubling-up on the brownies & oatmeal cookies for Saturday's barbecue so I'll have enuf to take Sunday) and also macaroni salad.

Over my weekend off (Mon./Tues.), not sure what I'll be eating but it more than likely won't be pork!

(all this talk about yummy roasted chicken has me wantin' to go by Kroger's or Wal-Mart to pick-up a bird or two!)
 
Today we will be working in the yard. Planting and getting ready for my favorite season of the year "green" :)

For dinner I'm doing fillets mignon with blue cheese. I thought I was going to make a salad but now I'm toying with the idea of making steamed artichokes since they are in season.
 
Today I'm finally getting around to cooking that Ethiopian feast I've had on my mind for so long.

I'm making

Doro Wat (chicken and egg)

vegetable Wat

Misr Wat (lellow lentils)

fresh ethiopian cheese

salad of tomato, onion & pepper dressed with lemon juice
(they serve this at my favorite Ethiopian restaurant)

Ingera

Rice pudding with almonds and rose water

I have about half of it done already and will reheat it when guests arrive. These recipes seem to serve 20. I'm most nervous about the Ingera but I have my teff and I'm ready so we will see.
 
Jon wants smoked bbq chicken wings again.
I will make some salad to have with mine. He is not much on side dishes.
 
WEDS. 05/20: Am hosting a few buds from a volunteer group at my place tonight and am keeping it simple/casual which is pretty much how I always try and do it these days! It's all guys who fancy themselves burly he-man types so no girly foo-foo stuff for this group- HA! The cave-man-style menu will be T-Bones outside on the weber, beer-battered onion-rings, baked potatoes (biggest 'taters I could find- they're HUGE!) rolls, butter, and broccoli w/ cheese sauce. Did I mention BEER? And double-chocolate-chip-cookie ice cream sandwiches.
 
I was going to make eggrolls but the stupid wrappers I bought were garbage. You couldnt even get them apart. I put the filling back in the fridge til I get another pack of wrappers. I made breakfast for dinner. We had homemade buttermilk biscuits, eggs, turkey sausage, gravy and fried apples. I made Jon two custard pies. I cooked green beans and new potatoes with cornbread and I made the strawberry cream bread recipe I posted. I put some chicken thighs in buttermilk, hot sauce, garlic, salt and pepper to soak overnight. I will fry them up for dinner tomorrow and make some garlic herb roasted new potatoes for Jon to have with it.
 
Sounds absolutely delich, janie! That jon- golly, he's certainly a well-fed boy! How wonderful to have a fantastic cook to care about ya!
