What is for dinner? (May5 09)

My FIL took us to the chinese restaurant here in town for supper.
We met his sister and nephew there.
I plan to smoke some chicken thighs and legs tonight.
I have a marinade on them I whipped up yesterday. I plan to hickory smoke them and then glaze them in the oven with a beer based bbq sauce. It is to hot through the day to turn off the ac and use the stovetop smoker.

Tonight I'm off to a friend's w/ the makin's for lasagne. He says he's never made it before so it'll be lesson-time for Minot! He happens to have a wonderful l'il hole-'n-the-wall bakery nearby so we'll grab bread (and a couple choc-dipt coconut macaroons) there. Add a salad and we'll call it good!

Hope you had a lovely evening Kev.

I made bbq smoked chicken in the smoker. We will munch that for a couple of days.

I'm making a pizza. Never good at making the crust so I grabbed that from Trader Joe's. Going to make half Hawaiian and the other half with just be cheese with green peppers. Got a new pizza pan so I must christen it.

What kind of a pizza pan did you get SpiceisGreat? I used to ahve a pizza stone from Pampered Chef loved that thing! Hope your pizza turns out great!

Cuban sandwiches, and chocolate pudding for desert! Those sandwiches were so-o-o-o good, I cooked my pork roast just perfect, it pulled easily, was seasoned great, and I used a cast iron griddle with my cast iron skillet on top of that to smash the sandwich down while I grilled it! Too tasty!!!

Had a huge Viet Namese Pork Sub earlier night and brought the remaining half in to work for tonight's midnight meal... it's yummy- made on a crunchy baguette w/ sliced bbq pork, crunchy bean sprouts, crunchy julienne carrots, and mayo w/ soy sauce in it. MMM!

I made a regular cheese pizza because I forgot the green peppers. It turned out great. The pan I was using before left my crust feeling and tasting soggy. The pan I have now has holes at the bottom and made the crust alot crispier. I like my new pan :D.

Cool, I am so glad to hear you got a better pizza pan! I also had one with the holes at one time. I still think you would like a pizza stone, I believe K-Mart sells them also> and if you get it good and hot before putting your pizza on it, they make a terrific crisp crust!!!

Tonight? Reheated angel hair with gravy, hot sausage, and meatballs.

Well..today I am making dinner for my FIL. To say thanks for having my car repaired for me.
I am making 10 nice fat chicken legs I soaked in buttermilk, hot sauce, garlic, salt and pepper. Gonna fry them up nice and crispy.
Also I am taking home made buttermilk biscuits, southern potato salad with fresh dill from the garden. I found some beautiful pencil asparagus at Krogers Im roasting in the oven with evoo, garlic, salt and pepper. Roasted new potatoes with herbs de provence, garlic, salt, pepper and evoo. Oven roasted corn on the cob. I covered it with roasted garlic and chive butter before I roasted it.
For dessert I am making orange sherbet ice cream from my Screen Doors and Sweet Tea cookbook. When he calls to let me know he is home all I have to do is stop by somewhere and get a small bag of ice for the ice cream machine.

I made chuck steaks with italian marinated tomatoes on toasted french bread drizzled with extra virgin olive oil.

RE: "Yes I do and thanks again for letting me know about the book"

The book made me think of Francie when I first saw it- since she's from Mississippi! Then all you other southern girls crossed my mind- janie and cath!!!

I made some homemade french bread last night. For lunch today I had tomatoes and fresh sweet basil tossed with a vinaigrette made of evoo, white wine vinegar, mexican oregano, grated garlic, salt and pepper. I toasted the french bread up and had the tomatoes on top of it bruschetta style. Drizzled with good evoo and more salt/pepper.
It was so good!
Jon had a cheesebuger smothered with mozerella cheese and crispy fried potato chips for lunch. For dinner we are having my herb roasted chicken. I already made bbq baked beans and southern potato salad last night to have with it.
