You don't need no stinkin' pizza peel sweetie!!! I never used one and mine was just fine!!!
Ok here is a dumb question. The book says to let the dough rise on your pizza wheel and preheat your oven. Your supposed to slide the dough onto a hot baking stone right off the pizza peel. You would want to put the dough straight onto the hot griddle so what do you move the dough on? Parchment paper maybe?
