Wow Mama, as always you make the memories flow. I remember Grandma's ravioli. So big, so filling, and so tasty. I cringe at the junk in the frozen food aisle they call ravioli these days. Yours look just as good as Grandma's.

As my gram got older - her raviolis got bigger and bigger - almost as big as her ricotta cookies that were about the size of torpedoes as time went by!
And like her and my mom - some of my pastas, etc. are getting bigger with age. But if I use that lonely plastic tumbler - they are uniform in size and not being made bigger as I roll the dough. Although sometimes I do use the tumbler and instead of folding the dough over, I use a top and bottom disk and crimp all the way around. Unfortunately, one or two of those and I'm too full to move.
as my gnocchi grow in size................ LOL
BTW - did your gram cut up the scraps and cook them? what did she call them?

I'm not sure on the spelling, but it was pronounced gavattis. They were good
The older I get the more I'm realizing most Italian words I know (besides swearing LOL) have regional interpretations.
