Brook recently let me know about this. I hope no one gets angry but I thought I would post it in case anyone wants to participate.

Bruce Aidells (founder of Aidells Sausage Co.) is America's go-to guy when it comes to meat. He's written half a dozen books on the subject, and fields meat questions for everyone from NPR to the New York Times.

If you've got questions of your own, Bruce will be hosted at a Special Guest forum at Cheftalk, February 11-13.

There's no charge to participate. But you do have to be a registered member, which you can take care of by going to ChefTalk - Cooking Forums, Cook Book Review, Cooking Articles and Recipes by the chefs.

Apparently Brook no longer wants to participate here. Hasn't posted in months - just visits daily - never participates.

Brook still answers all of my stupid questions via pm lol. I have learned so much from everyone here but especially you and him. When I talk to other foodie friends Im always Mama showed me this and Brook taught me that lol. Your marinara is on my regular rotation along with ricotta gnocchi. As soon as I get the nerve I plan to make some of the homemade noodles you posted. I want to make risotto when I can find the rice. Brook is a fountain of information. I swear that man is like an encylopedia of food knowledge.

I have a good friend who lives right across the street. He is such a good cook. I keep telling him to sign up here and check the place out. He makes amazing sushi.

I wish Brook still posted in threads but I am so grateful he still visits the forum and keeps in touch. He is a dear friend and a great teacher.

Yep- Brook is AWESOME!

Afterall, I met him a couple years back at another forum and he's the one who steered me here! I am grateful to him in many manners...

The thing I greatly enjoy and prefer about Spice Place is- I genuinely like ALL the folks I encounter here on a darned-near daily basis...mama, janie, Cathy, Francie, Nan, Ms. Mai, Jafo, CanMan, Cookie, jfain, Tater Tot, IChef, and the others... Plus there's a constant influx of newbies too- and the new blood is always fun!

Mama runs a tight ship and keeps a clean house... full of fine folks- and I appreciate that.

Brook was here quite a while and he contributed a lot- over 1300 posts! I hate that he's decided to leave. I miss him- but I still love it here- and the family of folks here is important to me.
