Wanna hear irony? I was just reading in a cooking mag a couple of weeks ago an article about the safety of eggs. The article went on to state that the odds of one of us getting a tainted egg in our lifetime - with the advent of chicken growers' reluctance to use antibiotics and growth hormones and the government tightening regulations - was about one in a billion.
I think it is so sad that food manufacturers seem to care more about shelf life than the life of humans.

I so agree. I don't trust any store anywhere.
I live in Norfolk Va and since 4 of my grandchildren live with us, I have to buy a lot of chicken. Also, our family reunion was a few weeks ago and I went to our neighborhood market to stock up on chicken parts. I don't mind so much that it's frozen when I purchase it because with less than 2 blocks to come from market to freezer, there's little danger of contamination. I took all of the chicken out on the morning of the reunion to thaw. As soon as I cut the plastic, a horrendously foul odor came from the bag. I immediately triple-bagged it and took it right back to the store. Even the customer-service rep wouldn't touch it.
They don't care about us. It's all about the ding dang dollar.

I have tried to buy whole chickens on a couple occasions at the same store I mentioned with the eggs. Both times the chickens were bad and when I took them back they tried to give me another one. I told them after smelling rotted chicken I really had no desire to cook it for dinner. I would so not put it past them to switch out those eggs like Mama mentioned. I love to roast whole chicken so once a month I get 4-5 from Walmart and put them in the freezer. This town has two sorry excuses for grocery stores.

Whole chickens from our local WalMart are just about salted for life. Chickens range from 72 - 94 mg sodium depending on light or dark, bone in or bone out and skin on or skin off. The ones at Walmart list at 320 mg per 4 oz. Always fiqured a 4 lb hen was a 2 3/4 Lb chicken sitting in 1 1/4 lbs of brine. While it does lengthen shelf life it takes it off of my low sodium diet altogether.
