I took smoked salmon wraps to my father in laws for the three of us to have for lunch today. I used the rest of the salmon I smoked a few days ago and just mixed it with my favorite ranch dressing and some minced scallion. Spread them onto some warm tortillas and rolled. My husband and father in law both absolutely loved them. My father in law was already figuring out how he could make the same thing using canned salmon and liquid smoke lol. I told my husband when we got back into the car I hoped he realized what ever concoction his Daddy cooked up trying to duplicate my recipe he was gonna want to feed to us :eek:
This is the same man who decided canned salmon straight from the can was delish dumped over salad. He also came up with mixing a can of diced mixed vegetables into his salmon cakes before he fried them one day. Now those were horrible...not as bad as the salad he made that time but pretty close.
My father in law asked me how I made the wraps and you could totally see his eyes glaze over before I even got finished telling him how I smoked the salmon. You could see he was already thinking of his own way lol.

My fil just keeps mentioning how rich they were. I dont think he believes me that I used my fav low fat ranch dressing in them. Normally I hate lowfat items but I love Hidden Vally Ranch low fat Ranch Dressing.

My brother brought me a bunch of canned veggies today they got in a food basket. There were two cans of the veg all diced mixed veggies in the mix. I had a laugh remembering those salmon pattys he put those into lol. I really appreciated all the canned veg. There were two big cans of Bruce's canned yams & three cans of whole cranberry sauce. Several cans of corn, peas, green beans and other stuff. I told my husbands Dad not to be buying any canned vegetables or cranberry sauce for Christmas dinner. I will use alot of them in soups. I plan to make use the yams to make a sweet potato casserole for Sunday supper along with buttermilk fried chicken & biscuits.
