What did you have for dinner last night?

Care to share the recipe? I'm always looking for some chicken recipes that are good because my husband needs to cut back on the red meat, but doesn't like chicken most of the time. Of course, he's used to it being either fried or barbecued... I made some smothered chicken breasts once that he loved. They were originally supposed to be pounded thin to make stuffed chicken breasts but they didn't thaw in time, so I put the stuffing on top, and it baked up quite nice. The chicken was moist and tasty with the bread crumb stuffing on top.
 
I enjoy barbeque chicken a lot, but just regular chicken... I don't care for it that much. There is this buttery chicken that I like a lot though.
 
We're grilling steaks as we speak. That and grilled corn, and baked potatoes. Peaches and whipped cream for dessert.
 
I've never heard of those... Care to share the recipe? My husband loves meatballs but mine always fall apart.

I don't even know that I have a specific recipe... basically you combine ground meat (I use turkey), breadcrumbs, and the spices you like, then mix up some ketchup and brown sugar, put half of the ketchup mixture in the meat, form the meatballs and place them in greased* muffin tin. then spoon the rest of the ketchup mixture on top of the meatballs, and cook, 350 for 20 minutes.

Actually I got it from market so I don't know the exact recipe. Its a roll filled with chicken pieces togeher with mayonnise, salt, coriander leaves, onions e.t.c. It is a labenese dish. Why don't you try a search on net for "shawarma". I hope you would find the recipe.

But if your husband needs to cut on the red meat due to health reasons I won't suggest you to go for it as it is filled with mayonnise. Yes you can choose not to put mayonnise in it though.

It's because of high cholesterol, and he needs to lose weight. We've already switched to the Smart Balance brand of mayonnaise, it's supposed to be heart healthy. I'd look at the jar for the nutrition info, but I used the last of it the other night, and we haven't went grocery shopping yet today. We don't use mayonnaise very often anyway, that's why it's not that big a deal for us to be out for a couple days.

Muscle Girl posted a delicious sounding recipe for Apricot Chicken Recipe. I've been meaning to try it because it seems those two flavors will blend into a delicious final treat.

We went to this homemade BBQ place near us, and had their delicious ribs. Yeah, they're not healthy, but they sure taste good. It's so homemade, that everyone that goes there talks about how good the food is, or how they quit the job and work there, and how they've eaten there for 3 years. My favorite comment from last night was the gal that asked if her order for tonight was ready. I love good home made BBQ.
 
We had beef/vegetable/cheese casserole. An excellent way to get in some fresh veggies and it's only 8 WW points! It tastes very much like lasagna, just without the pasta.
 
We had Saucy Pork Medallions last night from Kraft Food and Family Magazine. Hubby isn't too fond of peas though, so I skipped them. And we had mashed potatoes instead of the stuffing... I was craving mashed potatoes for some reason, and then I only ate a couple bites of them. About an hour after dinner was done and cleaned up, I had a craving for Pop-Tarts, so I ate them. Then I ended up eating a grilled cheese sandwich a little while after that. I just couldn't decide what I wanted last night, I guess.
 
I had to do my merchandising jobs so I got home late and fixed us frozen pizzas they were not the best ones that I have ever eaten.

Your not being rude... just about everyone who's been here awhile knows I am pregnant. I'm about 6 months, and due on Christmas.

We had BBQ chicken thighs, green beans for my husband and peas&carrots for the girls, and cheesy biscuits. I was originally going to make the Cheddar Dinner Scones from Mama Mangia, but I was running a little behind so I just made them into drop biscuits instead. They came out pretty good.
 
Last night we had tacos and that is what we are having tonight as well. leftovers

We were going to make chili tonight but decided to make frozen pizza since it's so easy. We keep them around for emergencies, and just got too busy to make chili. It's cold out though, and chili would have been nice. Maybe tomorrow.
