Last night we had faux chicken pot pie (no pie crust, but topped with biscuits).

Last night hubby cooked. He cooked some steak on the griddle & made some guacamole.... Then heated some corn tortillas in some grease.. stuck it together and boy was it...... gross..... LOL Must be the fact that I hate corn tortillas.

I made cherry-glazed pork and cooked carrots with dried apricots and almonds earlier this week b/c someone from my Bible study had a baby and i made her a meal (and doubled the recipe so we had a meal here too :)).

We had a mix of breakfasts for dinner... I made pancakes, fried eggs, and chocolate Malt-o-Meal. They all ate like they were starving to death. Silly people...

We grilled steaks and also had twice baked potatoes. Mmmm...

I wanted to grill again today but it is raining.

Left over leg of lamb and roasted potatoes
on fried pita bread with garden fresh tomatoes and Walla Walla onions.

Baked ziti with Texas Toast.

and tonight....baked ziti with Texas Toast!! ;)

Tonight...

I have a pot of French onion soup on the stove.
I'm not ready for winter but I am ready for soup and comfort food!

I made curried eggplant and potatoes with onions that we ate in whole wheat pita pockets. It was a pretty good and flavorful vegetarian dish.

French onion soup...leftovers tonight

I love french onion soup with croutons on top, and topped with mozzarella cheese then broiled. It best with Vidalia onions too. I make this a couple times a week in the spring when the Vidalia onions are freshly arriving at the grocery stores.

I love curried foods but I have to eat out to enjoy them as my other half doesn't like the taste of curry, even the light taste that's in Near East Curry Couscous.
