What did you have for dinner last night?

Let me perfect it first then I'll have it on my website, pictures and all.

I've had some delicious smoked salmon fillets that were simply cooked in a little Amaretto. Sumptuous! That might be food for thought on your future cooking experiments...

I've been sucessful adding a little Amaretto to a pot roast recipe. Just thinking about Shrimp and Amaretto is making me hungry. ;)

Thanks.. always nice to have another salmon idea to try. Omega 3 fatty acids are our friends :p

Anyways, dinner tonight was a bit of a surprise but something I'm not going to try again anytime soon. I had these little round chuck steaks that didn't do very well when pan seared so I decided to use what was left and made 'em a crock pot meal. I seared the tough little buggers, and then threw tomatoes, onion, garlic, balsamic vinegar, olive oil, red chiles and honey in a blender and made a very yucky muck  that I used at first for simmering the meat for an hour. Then tossed everything in the crock pot for 8 hours on low.

Actually turned out better than expected and was pretty darn good over white rice. Honey and vinegar makes everything better:)

oooo chicken parm sounds yum.

chili and cornbread. borrrring but always popular with the men.

Pasta with marinara sauce, shrimp, artichoke hearts, and black olives. It was so easy and YUMMY.

We had burgers on the grill. I don't eat hamburgers very often these days, so I really enjoyed it. I had some delicious rosemary-scented rolls to serve them on.

Am crockpotting one of those crockpot-in-a-bag deals. This one is a beef vegetable soup by Marie callender. I hope it's not oversalted like the Banquet ones.

filet wrapped in applewood bacon, with twice baked potatoe and asparagas, yum!

We had tilapia baked in foil with mushrooms and artichoke hearts. It wasn't all that. I don't often make fish that I actually like, but I try.

I made potato soup. It had potatoes(obviously), macaroni, bacon, & sausage. It was really good. :)

You sound like me. I don't really like fish, but I try occasionally.

We had a different sorta spaghetti. Spaghetti meat sauce with shells instead of spaghetti noodles. And garlic bread, of course. Quite good.

We had cheddar stuffed brats, mixed beans, and potatoes.

Tonight, maybe pasta. I'm in the mood for a good baked ziti. ;)

chili and cornbread. You can never have enough cornbread, though. mmmm...

I tried a Rachael Ray 30-minute recipe last night and it was a HUGE HIT. Mini Meatballs with Broken Spaghetti. Husband said to add it to the "make again" list.
