What's for dinner?

I made a rustic pizza. I made the sauce and the crust. I caramelized sweet onions and mixed in some roasted garlic which I put on the pizza with some mild pepper rings, fire roasted red peppers, parm cheese and tons of mozerella. Jon wanted pizza so I raided the fridge. It needed mushrooms but I was out.

I'll have my ten year old nehew and 2 of his baseball buddies for a few hours tonight after their game, and he has requested a supper of either corndogs or Manwiches, and tater tots. I've already got ground beef in the fridge, so I'll make the sloppy joes. Also will throw together another of his favs- lime jello w/ manadrin oranges when I get home from work later this morning. And I've already got a box of his fav snacks for the ride home from school after the game- Little Debbie's Otameal Cookie Sandwiches. He's nearing that age when he can pretty much eat non-stop!
 
Casserole night

I made tuna-noodle casserole last night, made it with the mini shells and extra fresh mushrooms & small green peas with Parmesan cheese. It was Good that was dinner tonight. Cookie :)
 
I made stuffed shells and roasted garlic foccacia bread topped with sundried tomatoes and mozerella.
 
I love them. Last summer I made some of my own from the tomatoes Jon's Dad grew. They worked out really well. I dried them in my dehydrator and then stored them in a clean canning jar with olive oil in my fridge.
 
Salmon Croquettes. I plan to serve them with a squirt of lemon and some steamed broccoli. The last of my gluten free chocolate cake and a cold glass of milk for dessert.
 
Tonight was animal-free-night at my place... (unless you count the leftover lime jello w/ mandarin ornages I finished-off from supper for my neohew last night) plus I had a class so was crunched for time, so I relied on my yummy fall-back in-a-jam supper: a pair of split onion bagels- each double toasted and slatthered w/ butter, pesto and slices of provolone.

My midnight meal here at work is gonna be a chilled fusilli/spinach toss w/ a piece of chilled leftover grilled salmon chunked-up into it and some bottled red wine vinaigrette.
 
A really Good salad-soup place!!

We went out to Sweet Tomatoes today for soup (3-bean turkey chili) and salad it was really Good! You can build your own salad and they have lots of different kinds of soups. Tonight I'm making Orange Roughy, chicken egg rolls, and fried rice for Saturday night's dinner, have to work this weekend.

WE WENT TO OUTBACK STEAKHOUSE! I HAD THE PRIME RIB, AND STUFFED SHRIMP THE PRIME RIB WAS FANTASTIC! I WAS NOT AS IMPRESSED WITH THE SHRIMP, BUT TONIGHT WE ATE "ON THE HOUSE" SO TO SPEAK, THEY COMP'D OUR MEAL AFTER A LITTLE MISHAP LAST FRI. NIGHT WHEN A GLASS OF ICED TEA WAS DUMPED DIRECTLY INTO MY LAP:D BOY WAS THAT ONE COLD-D-D-D-D MOMENT:( AND NOT JUST A BIT EMBARRASING AS WELL!:eek:
 
I recall you sharing about that tea mishap, Cathy. Dang- your supper there tonight sounds yum-yum!

My tummy was queazy earlier tonight so I ate super-light... just chewed on a few saltines, some dried figs and a couple raw carrots. Tonight here at work I'm feeling better but still want to eat carefully, so it'll proll'y just be a bowl of oatmeal or cheerios...
 
Well tonight I'm trying a recipe for a side dish that I haven't made before. It has sweet potatoes, kale and an apple. It just so happens I have all of these things on hand and I need to use them up so I was happy to find the recipe. I'll be serving it with blackened catfish and then that is the last time I will cook for a week. We are off to Mexico! Palm trees & blue ocean here I come!
 
SUNDAY, 04/26/09:

Last night I invited my friend Minot over- we planned to work on digging in the dirt and getting some summery things planted out on my patio... I had picked-up a pair of turkey clubs and some salt & vinegar chips from a Schlotzky's Deli- BUT, Minot came bearing Popeye's chicken and cajun rice, so we ate that instead and stick the sandwiches in the fridge. Now, Sunday Night we're going to HIS place to plant and I'll take the sammies & chips there for us to eat. My midnight meal tonight at work is cottage cheese and canned cling peaches- YUM!
