What's For Dinner

Wednesday Night was grilled butterfly pork chops w/ orange marmalade, sauteed carrots/parsnips/turnips, creamed spinach, and sour-cream/dill potatoes. Thursday Night? LEFT-OVERS! :)
 
Buttermilk fried chicken, cornbread, turnip greens, roasted potatoes, turnips and onions with rosemary and garlic.
Zucchini bread for dessert.

Cheese Pie

Freshly mashed pots
Stong mature cheddar cheese (grated)
Onion (grated)
Parmasan

mix all together.
Put in baking dish cover with more cheese and put it in the oven until hot.

Tinned toms
Garlic
herbs de province

Simmer until juice starts to reduce and thicken.

Serve together. So simple, but I love it.
 
This evening and seen as it is Friday it will be fish and chips served with petti pois and tartare sauce.
 
I've got salmon thawing for tonight's supper. And I've still got some leftover pea risotto... and some cranberries I need to get used-up.
 
Well I am selecting spicy Caribbean food stewed pumpkin and shrimps and my little Caribbean dumplings sauteed with onions/tomatoes in butter with a touch of hot pepper sauce, spicey pigeon peas and salad, and of course cole slaw made with cabbage, onions, carrots, mayonnaise, garlic and honey. As you can see I did not mention salt. My husband and I needed to lose weight fast, to fit into our scuba gear, so we bought a fat free cook book and their recipes never mentioned salt for sugar brown sugar or honey was suggested, since then I have not used sugar or salt to taste and have not missed it. But if you prefer to add salt to any of my recipes please by all means do so.
 
Easy Pot-luck dinner:) tri- colored Tortellini with cut-up smoked sausage with veggies in a cream sauce
serve warm w/Parmesan cheese.

Tonight we had Corned Beef Brisket, Cabbage, Carrots and Red Skinned Poatoes, Corn Bread Muffins, Crescent Rolls and Biscuits (different breads for all those in the family). A wonderful meal, and best part of it is a Grilled Reuben Sandwich for lunch tomorrow!!!
 
I made some stuffed chicken breast.During the last 15 minutes of baking I added gravy. I was able to get some more corn on the cob so we had that too.
 
Broiled Scallop Stuffed Shrimp, Pan-Seared Scallops, My famous Chicken with Egg Noodles (for those who don't eat seafood) Yuca with Sauteed Onions and Garlic Aeoli Sauce, Cheddar Cheese Jalepeno Appetizers, and lots of leftovers warmed up too!

Cathy- I made Chicken & Amish Noodles too for a supper for my Mom a few nights back and for supper tonight I nuked the leftovers- SO YUMMY & COMFORTING!
