Your favorite soup????

I wish I had someone around here to share it with. Jon doesnt like any kind of soup.
It is so hard to make a small amount of soup. My sis's hubby is supposed to come to town Mon so Im gonna send her a bunch of it then. He is coming to get the cheesecake I made her for her birthday. I used to share soup with my older neighbor lady but she moved to Columbus OH to live with her son last June. She still calls and says she misses my cooking but my homemade bread is what she misses most lol. I never knew she liked the bread that much. After she moved and I found out she liked it so well I wish I had made it for her more often.

Thank you Cookie.
My sis asked me when they come tomorrow if I can show her how to make shrimp scampi Soooo I peeled and deveined a pound of medium shrimp and stowed it in the fridge til they come tomorrow. It is a quick dish so Im sure she will get it after one demo. I really need to show her how to do breakfast gravy. She misses Mom's gravy so much and has never gotten the hang of it. I told her she better come hungry lol. I hope I get the chance to make a loaf of french bread before they come so I can grill some for them to dip into the scampi broth.

How did the Scampi turn out? Love me some Shrimp Scampi!!!! Just tell your Sis not to over cook her Shrimp, that is the number #1 rule I have for cooking Shrimp NEVER EVER OVER COOK>>>>EVER!!!;)

Now if Bubba Gump knew anything at all, he knew that one should never ever I REPEAT.. NEVER over-cook SHRIMP!!!!:D

Do love the part of the movie where they are cleaning the floors and Bubba is calling off all the "Shrimp Dishes"!

My favorite shrimp dish is Shrimp Etoufe' with french toast points, made at a little cafe' in Mobile, AL gosh that stuff could clog an artery with just one spoon full, but sooooo worth taking the chance!!!!

They were hungry when they came so I had sausage cooked and biscuits made. I showed her how to make gravy and fried her eggs. Evelyn and Catie nibbled on biscuits then Evelyn said she was hungry. I asked Cole if she wanted to learn to do the scampi and she said yeah so I showed her how to make it and told her to never ever over cook it. Med shrimp on my stove was less than 2 min til perfectly done. Little Miss Picky five year old ate half a pound of shrimp scampi of all things lol. I told Cole to be careful when she reheated the leftovers not to over do it cause they would turn to rubber. She took her soup, scampi leftovers and cheesecake home with them. She was so full when she left she said she would enjoy the food tomorrow. Evelyn took the rest of the chocolate biscotti cookies I had on my desk. Her Momma told her she couldnt have them I told her if there is a cookie in this house and either of those babies want them they can have them with my blessing.

I had the parsley and garlic already minced in little plastic cups in the fridge so everything for the scampi was ready to throw in the skillet. Needless to say I had some dishes to wash when they left.

I have made biscotti maybe three times. Jon doesnt like it because it says it is to hard. The few times I have made it Jon's Dad has gotten half the batch. He likes them. Back during the holidays I made chocolate peppermint biscotti. The ones she took were Nona's Chocolate Biscotti I had gotten at SAMS.

This little kitchen is so small and I have so many do dads sitting about that when I dirty a few dishes I have to wash them up lol. The sink in there is small and not deep at all.

I used to Love Campbell's tomato & rice when I was a kid, now I buy the Healthy request Tomato soup from Campbell's. I like mushroom soup to mostly in casseroles. Cookie :)

Two of our favorite soups are chicken corn soup and Italian Wedding Soup. I have good and easy recipes for both and usually double the recipe so I can freeze for later. As a matter of fact, I'm probably going to make the Italian Wedding Soup today.

CHZCKLADY, can you please post them? I love the wedding soup, also!

BTW- welcome! I see you're a new member! We're a fine bunch of folks who always enjoy meeting new people and making new friends!

Thanks for the welcome! This is a great place to get quick answers to questions and everyone seems so nice and helpful.

Following is the recipe for Italian Wedding Soup. I was given the recipe over 20 years ago and I have tweaked it a bit over the years. The recipe calls for whole chickens but I prefer white meat so I use the split breasts. You can use either 2 (3 pound) chickens or 6 pounds of split breasts. This recipe is the doubled recipe so you can make half if you want a smaller amount. I always make more and what we don't eat in a couple of days, I freeze to thaw and use later. This makes a large pot of soup.

Italian Wedding Soup

Ingredients:
6 pounds of split chicken breasts
2 pounds of fresh carrots
1 large onion
celery tops for stock
6 chicken bouillon cubes
1 teaspoon garlic salt (or to taste)
1 teaspoon accent (or to taste)
1 teaspoon onion powder (or to taste)
1 can of chicken broth
2 pounds hamburger
2 diced cloves of garlic
1/4 cup parsley
1/2 teaspoon oregano
1/2 cup dried bread crumbs
salt and pepper to taste
2 cups orzo pasta
1 box frozen spinach, thawed
(sometimes I add other spices to the chicken stock depending on what I have on hand and what sounds good at the time.)

Directions:

Place chicken in a large pot and cover with water. Make a stock of celery tops, carrots and onions, bouillon cubes, garlic salt, Accent, onion powder, salt and pepper. Bring to a boil with the lid on then simmer for 1 and 1/2 hours to 2 hours on low. When the chicken is cooked, take it out of the pot and strain the broth. Dice the carrots and place back in the broth.

Preheat the oven to 350 degrees and make the meatballs by combining the hamburger, 2 diced cloves of garlic, 1/4 cup of parsley, 1/2 teaspoon of oregano, dried bread crumbs, salt and pepper. Form into bite sized meatballs and place on a jelly roll pan. Bake at 350 degrees for about 15 minutes. Meanwhile, cut up the cooked chicken into bite sized pieces.

Bring the broth with the diced carrots in it back to a boil. Add the orzo to the boiling broth and cook as directed on the package. In the last 5 minutes add the thawed and drained spinach. When finished cooking, put the cooked meatballs and chicken into the pot and enjoy!

Hi Cheesecakelady, I'm Cookie :), Your Italian wedding soup sounds Good. I always enjoyed that soup but never made it. I never realized there was chicken in this soup. I thought it was just very small meat-balls and spinach and little pasta pieces (orzo)? I didn't know what those little pasta pieces were called. Thanks for sharing your recipe. Cookie :)
