My hot weather favorite is a creamy tomato soup that is thickened with rice. Since it's blended you don't see the rice (1 1/2 Tbs) it's just in there to thicken it. Recipe available if anyone is interested.

I enjoy most soups, but one particularly decadent one that I recall from was Cream of Onion w/ Brie. DELISH!

Jp & Kev both of you have got excellent choices there! I never heard of either one just as you mentioned them. But Brie w/ Cream Of Onion even sounds good. And I adore old fashioned Tomato Soup so using rice as a thickener sounds good JP! Please do share the recipe! Tonight my hubby pulled out some horrible thin sliced steak and thawed it out for me to make something out of for dinner tonight. Well a real tough cut of meat like that goes straight into my pressure cooker so that I can get it tender enough to chew:) I made it with a creamy tomato sauce with some egg noodles to serve it over and it came out delicious! Also had Texas Toast and broccoli as a veggie. Turned out so good! I love tomato based sauces over any meat and even sometimes a good piece of fish!

Here you go Cathy. I just copied and pasted it from the Low Sodium Forum. You can sub normal ingredients in place of the low sodium stuff I have to use. Just use 1 cup beef broth in place of the bouillon and water. BTW I now add 2 roma tomatoes, chopped, to the diced tomatoes to lower the heat just a little bit. Also feel free to add 1/2 tsp salt to it.

Cream of Tomato Soup

Most all cream soups are a no-no for a low sodium diet. This one was copied and changed several times mostly to get rid of the dry milk powder that was creating most of the sodium count. First you have to make a "No-Salt seasoning. 1 1/2 tsp garlic powder plus 1 1/4 tsps of the following. Onion powder, thyme, paprika, celery seed, white pepper, dry mustard, dried lemon peel and 1 tsp black pepper. Mix and store in a dry container.

Cream of Tomato Soup -
1 tsp sodium free beef bouillon
1 can No Salt Added (NSA) diced tomatoes
1 1/2 Tbs of uncooked long grain rice (to thicken)
1 tsp No-Salt seasoning (recipe above)
1/4 tsp white pepper
1 cup water

Bing to a boil in a 3 Qt saucepan, cover and simmer for 20 minutes. Pour into blender and puree. Store in the frig using a a microwave safe bowl to serve yourself about 3 servings. This is a little hot in case you want to lower the pepper content some.
