What did you have for dinner last night?

I had spaghetti last night. Usuallt my husband makes the sauce himself, but we had sauce from a jar last night. It wasn't quite as good...but it still worked.
 
We had company and I was very pleased that all my food turned out very well. We had:

Parmesan-Sage Crusted Pork Chops
Sweet Pea Risotto
Italian Salad
Almond Green Beans

Coffee
Gingersnaps
Chocolate Hazelnut Kisses

I had an easy night last night. Hubby was at the Nascar race in Texas, so I made me and girls some cheeseburgers. Quick & easy, even if they aren't so healthy.
 
Even though it's not Saint Patrick's Day, we had corned beef and cabbage tonight. The heads of cabbage at the grocer were small, so I bought two. But that was too much for the meal. I should have kept 1/2 a head for cole slaw. I think it was a good dinner even with the overage of cooked cabbage.

My favorite corned beef is a corned eye of round roast, which it seems from my experience, is only available around March 17th. I wish it was available year round as I try to avoid fat in meals, and eye of round is a very lean cut of beef.
 
last night? Southwestern chicken from the crockpot. And that's after we had texmex for lunch -- what was I thinking?!
 
I think you were craving Mexican food.

We had Zesty Chicken & Rice Skillet. I got the recipe from kraftfoods.com; everyone liked it.

I too like those eye of round corned beefs. But they musn't sell or they would be more available then just in March.

Tonight I tried to cook a pot roast with potatoes and carrots and onions. But after 3 hours, it's still tough, and I don't understand that. But since we're hungry around here, we've decided to 'slow cook' the pot roast and have it tomorrow night.

So instead we're having popcorn. Not! We're making a quick chicken stir-fry with frozen chicken and oriental veggies.
 
We had Sloppy Joe Skillet last night (another recipe from www.kraftfoods.com) and tonight I think I'll make some regular ol' pork chops with buttered noodles. I'm feeling kinda lazy today, plus our toddler kept me up half the night, so I'm dead tired anyway.
 
I was lazy last night and heated up leftover stew from the night before. Tonight though, I must cook (out of leftovers), so I guess I need to do some more reading and see what wonderful recipes I can find ~ we're due for a change in our boring old dinners.
 
I too was feeling lazy last night, but didn't have any leftovers to heat up so I ended up making some Honey Mustard Saucy Chicken and sweet peas. Hubby ate his as sandwiches & didn't eat the peas (he's a pea-hater) but the girls ate just the meat & the peas. I think my oldest had a piece of bread & butter with it, but I'm not sure. I was busy with laundry when they were eating.

I'm beginning to think it's time to put on a big ol' pot of some type of soup. We're getting hit with the awful cold front that's making it's way all over and we're expecting up to 10 inches of snow ~ in OKLAHOMA! unreal!

What part of OK are you in?? We live close to Ft. Sill & only got 4 inches yesterday.
 
We are having chicken tacos this evening. I will Grillsome chicken, heat some corn tortillas and heatsome refried beans. Will have cheese, lettuce, tomatoes, salsa, sour cream and gucamole to add into the tacos. It is quick and easy.

I live an hour straight west of Tulsa and about 35 miles NE of Stillwater. We were blessed with the first ever "blizzard warning" that dumped about 12" of snow here at the house. We've been snowed in since Thursday (cabin fever is kicking in!) and all of the roads are still being reported as "slick & hazardous".

ETA: I guess to stay on topic I should say that we're running out of groceries (this is supposed to be the trip to the store weekend), so we ended up having chicken and rice with peas, and some green beans.

Yeah it was grocery shopping weekend for us too, but luckily the roads were pretty much clear of ice & snow Saturday morning when we went.

We had No-Fuss Tex-Mex Roll-Ups from the Kraft Foods website last night. Its part of their Express Checkout menus, which they have 10 to choose from. The whole idea was to pick a menu, get the premade shopping list, and save money on your groceries. But whoever made these menus up obviously eats out on the weekends or doesn't eat at all because the menus only run Monday through Friday. So for our 2 week menu, I have to pick 3 of their 'week' menus & it still leaves us 2 days short because they have pizza every Friday & we just don't like pizza that often.
 
last night was chicken quesadillas - like every sunday night. They're one of hubby's favorites, so I make LOTS on Sunday night and he can take leftovers to work for a couple of days.

Tonight I think it's a chicken and mushroom pizza. Something very easy since I'm in the middle of baking cookies and goodies...my mom is getting sworn in as court clerk in the morning and I want to take some snacks for everyone there.
