What did you have for dinner last night?

We had chicken that DH smoked on the grill, and baked potatoes and fried okra.
 
We had Steak with corn,rocket, tomatoe with a drum stick on mashed potato.
 
I chunked up a chicken breast and baked it in mushroom soup with a little milk and served over rice. broccoli, cauliflower, and carrots on the side.
 
We had chicken sauteed in onions, garlic and lemon juice. White rice with black beans mixed in. It was really good.
 
We had penne with vodka cream sauce, and garlic bread.

I was craving chocolate pie so bad and I almost made one (yes, I know that's not really Italian but I really wanted some), but I am out of town for work for a few days now and DH probably wouldn't eat it all by himself.
 
last night I made a mexican pizza...

over the weekend we had chicken and noodles and chicken enchiladas.
 
Last night, I am barely unable to eat because I am really too tired to eat, but mom cooked fried fish called tilapia and made an enchilada made up of tomatoes, unripe mangoes, onions and a bit of anchovy. It's really delicious that I almost forgot I will be sleeping afterwards and stuffed myself.
 
I made a chicken stir fry last night to use up some leftover chicken. It was a great way to get in some veggies which I don't normally like. I used snow peas, celery, green pepper, mushrooms, carrots, and water chestnuts.
 
We had such a bad dinner, but it was so good. Junk food for adults.

Tater tot casserole:

Brown 1 pound ground beef with 1/2 chopped onion. Drain and stir in 2 cans cream of mushroom soup. Spread in a 9x13 dish. Sprinkle some cheese over. Top with frozen tater tots, lined up in rows. Bake for 30 minutes.
 
I made homemade pizza - thick crust with a meat sauce, mozzarella, provolone, and sandwich pepperoni - tummy buster!
 
I made umm....a bowl of cereal? :p

we weren't very hungry after a big lunch out, so it's okay, right?? :)
 
last night we had chicken and fried rice.

tonight...I'm thinkin' maybe biscuits and gravy. We're runnin' on the low side of groceries, so pickin's are slim!
 
I kinda experimented tonight with what I had around the house (like I said, groceries are slim).

I rubbed some taco seasoning into some chicken breast and grilled them up in the Foreman grill (I generally hate the thing, but figured I'd use it for a change). I served those on top of some mexican rice (white rice mixed with salsa) and topped with a little grated cheese.

Then I triangled up some flour tortillas and sprinkled them with salt and cayenne pepper and baked until crispy. Served with a dollop of sour cream to cut the hot of the cayenne.

Hubby LOVED it. :) I think that just made it's way into our regular meal rotation!
 
DH grilled pork chops, marinated in garlic/black pepper marinade. Yum.

Medako, I should try those baked tortilla chips.
 
We had hamburgers that were stuffed with pepper jack cheese and a green salsa, Potato Salad, baked beans and corn on the cob.
 
Last night was taco night, with fruit on the side. All the food groups in one fatal swoop. Dairy for the cheese, meat, lettuce and tomatos for the veggie and strawberries for the fruit on the side. Oh yeah, and the shell is the bread group. I use light cheese..
