What's for dinner?

Honey bbq smoked chicken legs, salad and biscuits.

I smoked a bag of chicken legs and one head of garlic in the stove top smoker with mesquite chips.
After one hour I took the wings and garlic out. I mashed the smoked garlic into a bottle of jack daniels mesquite bbq sauce and dipped each of the legs into the sauce. Then I popped them into the oven at 400 to caramelize the bbq sauce.
OMG! They are so good!

Tonight I had Minot over and we did swordfish on the weber. Also made cucumber salad and an orange/cottage cheese jello mold. (Minot likes dessert w/ every supper- even it's it's "just jello"- he says! I have no problem complying w/ this request- but my husky frame can't do chocolate cake or pie each night! Dang, I don't know how he stays so slim and fit!)

I have a yellow head, Parakeet (she looks like a smiley face) she's also lime green.

That chicken recipe was yummy but next time I may use half and half instead of all that heavy cream. Your parakeet sounds adorable.
 
I didn't buy any more p.b. Easter eggs, because they are to Good (I had a few on Sunday!) I bought a bag of chocolate mix it's got milky way, twix, snickers musketiere. I bought a small box of 4 Lindor Truffles. I can finaly eat Chocolate on Easter Sunday.... I'M SO HAPPY!!!!! Cookie :)

I just bought a bunch of eggs and some coconut birds nests for Sunday. My husband is going to be really excited!
 
I Love p.b. anything, I haven't tried the Bunnies yet lol.

We went to Country Buffet for lunch. I had low sugar orange cream mouse slice for desert, it was Good. Cookie :)
 
I made cheese and potato perogies for dinner tonight and also surprised the family with a couple of bloomin onions. The sauce I made for the onions was really good. I even ended up using it for a dipping sauce for my perogies.
 
Sweet & Sour Chicken Prep: 5 min. Cook:15 min.

1 Tbsp oil
4 chicken breasts (sliced into strips)
1 bag 16 oz. Frozen stir fry oriental veggies
8 oz. crushed pineapple in juice, undrained
1 can low sodium chicken broth
2 cups Minute White Rice (make according to pkg. directions)
1/2 cup sweet 'n sour sauce I like (Kikkoman Sweet & Sour Sauce)
1 Tbsp soy sauce I like (La Choy Lite)

Heat 1 Tbsp oil in large skillet cook chicken for 5 min. Add chicken broth. Stir in soy sauce over chicken. Cook chicken completely, and cut into strips.

In separate smaller skillet ADD Veggies and pineapple with juice, mix well. After chicken is cooked, add to veggies. Veggies should be tender.

Add 1/2 cup of sweet and sour sauce to your already made rice.

I made this tonight, for Saturday's Dinner. Cookie :)
 
I'm finding all this parakeet talk kinda questionable amidst talk of yummy garlic chicken! Hee-Hee! (just kiddin'!)

I'm going meatless again on Saturday...

...and making a big ol' angelhair pasta toss w/ pesto, fresh spinach, julienne carrot, julienne red/yellow/orange peppers, and pecans- tryin' to keep it light, 'cuz then Sunday? Am puttin' on the holiday feed-bag at the home of friends!
 
You know I was thinking the same thing Kevin!

Unfortunately I've been sick all week and haven't been able to cook the way I normally do. Last night was chicken sausages on the grill with salad and then off to bed.
 
I roasted a 5 pound chicken today. I got tons of spring mix salad at Sams yesterday so its roasted chicken and salad today. The chicken carcass is gonna donate itself for some nice broth I need to make Easter dinner.
 
I end up buying the salad mixes at the wholesale club at times too. The big bags. I regret it though because even with a family of 5 it goes bad a few days after it is open and taste very chemically.
I keep thinking about getting those green bags. I have heard from many people that they actually work very well.
 
I have never tried those green bags.
Jon got me three one pound containers of the spring mix salad. It wont go bad. The date said they were good for another week and I'll have it eaten before then. I even had salad for breakfast. This time of the year I crave salad. They had some decent grape tomatoes which I got to have with it. I am taking some of it with me to his Dad's tomorrow to go with dinner.
That is one reason I made the roasted chicken. Cold white meat throw into some spring mix with tomatoes, croutons and a light vinaigrette is yummy.
