June "What's For Supper?"

[Wow Cookie that sounds terrific, I must try it. Do you cook it in a covered skillet? Is that what you meant by stove top?

Yes, I cook it on the stove in a Big frying pan without the lid on it. You could probably put a lid on it but on a low flame, this dish turned out really good

For Wed. night dinner I made orange roughy with margarine, lemon & dill with tomato couscous. Cookie :)

Jons Dad took us out for chinese food.
I made homemade vanilla ice cream and sugar cookies this evening.

I've had so many radishes from the garden this year and I keep all the greens. I was going to make radish leaf pesto from Clotilde's recipe on Chocolate and zucchini but instead I decided to make them into a gratin along with swiss chard also from the garden. It's absolutely delicious. I just had another little slice for breakfast.

Yup! I usually prefer a savory breakfast. If I eat something sugary at breakfast I will be shaking like a leaf in an hour. The other day for breakfast I had toast with cream cheese and left over beef brisket. Yum!

Still working late tonight so dinner is a huge bucket of humus with carrots.

Hi everyone, I made apricot chicken breasts (stove top) with a fresh (whole) lemon juiced... with (1 cup) apricot preserves with some salt/pepper & Garlic Powder.:)

Cookie, I am going to swipe your recipe for a BBQ grilled chicken and make an apricot glaze with the garlic a lemon juice. What a great combination.

Tonight we girls went to a friend of mine's house and she had a deli tray with meats and cheeses, fresh fruit salad, and fresh veggies & dip. Oh and for us adults we had Mimosa's!!! We had a fantastic night! It's nice to have a girl's get together every now & then!:)

Tomorrow it is spaghetti and meatballs with bread sticks and dipping sauce.
Homemade ice cream for dessert.

For Papa's Day my sweetheart wanted seafood marinara and garlic bread...so that is what he got!!! It turned out fabulous, and served on a bed of angel hair pasts it wasn't too awful heavy for a summer meal!

Yesterday I made venison kabobs with a really good marinade I got from Bobby Flay. I grilled them up with the first squash from my garden and some baby potatoes that I steamed before putting on the grill. We had banana's foster for dessert.

Tuesday Night was egg salad sandwiches on soft white bread w/ bread n' butter pickles, mama's carrot-raisin salad, dilled string beans, and a german choclate cupcake made by my niece- YUM!

Tonight (Weds.) I'm grilling big thick boneless butterfly pork-chops outside, and won't be turning on the stove at all in doors, so will be serving cold sides- proll'y dilled 'maters 'n cukes vinaigrette, cole slaw, and a big bowl of minted honeydew melon balls w/ a splash of Midori.

Yesterday was Grill Balsamic Chicken breasts with Rattatoullie.

Tonight will be escabeche with corn chips.

It was a really hot day today!!! When I got home from work we had sausage pizza and salad with mushrooms, chickpeas, carrots, with blue cheese dressing.

For tomorrow's dinner I'm thinking of making another salad & adding grilled chicken with avocado's sliced. It is just to hot to eat & cook to much.

Cookie :)
