Dough Enhancer

Yields: 32 Servings



1 cup Lecithin granules
1 tablespoon Vitamin C powder
1 tablespoon Ginger ground



Instructions
Mix all ingredients and store in tightly closed glass jar.

Add to breadmaker in amount equal to yeast with other dry ingredients. Start machine.

Apparently, the ginger gooses the yeast and makes it act more swiftly, the ascorbic acid strengthens the gluten, and the lecithin aids the oil in causing the strands of gluten to slip against each other more easily and thus rise better.

Dough Enhancer #2




4 cups powdered milk
3/4 cup Lecithin Granules
3 tablespoons. vitamin C powder heaping
2 tablespoons. ginger
3 tablespoons. cornstarch



Instructions
Blend until smooth. Store in airtight containers. Room Temp. Use 2 teas. enhancer in each loaf of dough.

Granola Bread

1 pkg yeast
3/4 cup whole wheat flour
2 cups bread flour
1 cup granola finely ground
3/4 teaspoon salt
1 3/4 teaspoons sugar
3/4 cup milk warmed
1/2 cup buttermilk at room temperature
2 tablespoons butter
2 tablespoons honey
1 egg at room temperature



Instructions
Ingredients should be at room temperature.Liquids (and 'warmed' ingredients) should be at 120-130 degrees.

Add ingredients in order given.Setting: white bread

Irish Brown Bread


1 Lb Loaf:
1 1/2 teaspoons Active Dry Yeast
3/4 cup Wheat Flour
1 cup Bread Flour
1/3 cup Oats
2 tablespoons dried buttermilk I Used 2 Tsp
2 tablespoons Brown Sugar
1/3 teaspoon Salt
2 tablespoons Gluten Flour 100% optional
3/4 cup Water



Instructions
Add to bread baking pan and push start.

Cycle: Whole grain, white; timerSetting: Medium

Jam Bread

Small Loaf: Large Loaf:
2/3 cup Water 1 1/3 C
1 1/3 tablespoons Vegetable Oil 2 2/3 T
1/3 cup Jam 2/3 C
2 teaspoons Sugar 1 1/3 T
2/3 teaspoon Salt 1 1/3 T
2/3 cup Whole Wheat Flour 1 1/3 C
1 1/3 cups Bread Flour 2 2/3 C
1 teaspoon Yeast 2 1/2 T
