to replace 1 tbsp oil
per 3 cups of flour
Instructions
For a nice, soft texture for whole wheat breads replace 1 tablespoon of oil with 1 tablespoon of lecithin (for 3 cups of flour). It makes a big difference in dinner rolls and sweet rolls, too.
Lecithin is a natural dough enhancer derived from soybeans. It produces a softer loaf, extends shelf life, and improves rising.

Lemon Poppy Seed Bread
1 LB Loaf:
1 1/2 teaspoons Yeast
2 cup Bread flour
2 teaspoons Lemon Zest Grated
1 tablespoon Poppy seeds
3/4 teaspoon Salt
4 teaspoons Sugar
2 tablespoons Powdered Milk Plus
1 teaspoon Powdered Milk
2 teaspoons Butter or margarine
1/2 cup Water
1 large Egg
1 tablespoon Lemon juice
Glaze:
2 teaspoons Butter Or Margarine Softened
1 tablespoon Grated lemon zest
4 tablespoons Powdered sugar
2 teaspoons Lemon juice
Instructions
Place all ingredients in machine and push start! After bread has cooled, make glaze and drizzle on top and sides of loaf.
