Lecithin For Softer Loaves

1 tablespoon lecithin
to replace 1 tbsp oil
per 3 cups of flour



Instructions
For a nice, soft texture for whole wheat breads replace 1 tablespoon of oil with 1 tablespoon of lecithin (for 3 cups of flour). It makes a big difference in dinner rolls and sweet rolls, too.

Lecithin is a natural dough enhancer derived from soybeans. It produces a softer loaf, extends shelf life, and improves rising.

Lemon Poppy Seed Bread

1 LB Loaf:
1 1/2 teaspoons Yeast
2 cup Bread flour
2 teaspoons Lemon Zest Grated
1 tablespoon Poppy seeds
3/4 teaspoon Salt
4 teaspoons Sugar
2 tablespoons Powdered Milk Plus
1 teaspoon Powdered Milk
2 teaspoons Butter or margarine
1/2 cup Water
1 large Egg
1 tablespoon Lemon juice
Glaze:
2 teaspoons Butter Or Margarine Softened
1 tablespoon Grated lemon zest
4 tablespoons Powdered sugar
2 teaspoons Lemon juice



Instructions
Place all ingredients in machine and push start! After bread has cooled, make glaze and drizzle on top and sides of loaf.

Add to your machine according to directions

Light Wheat Ranch Bread


1 cup water
1 teaspoon salt
1 1/2 teaspoons canola oil
1 large egg slightly beaten
3 cups Gold Medal Better for Bread Flour Light Wheat
2 tablespoons Buttermilk Ranch Dressing mix
1/2 cup instant potato flakes
1 tablespoon sugar
2 teaspoons Rapid Rise Yeast Red Star brand



Instructions
Place ingredients in bread machine pan in order given. Bake on quickcycle, light crust setting.
